    and here I was putting desiccant packs in my chestnuts to keep them from molding. No wonder I couldn't keep chestnuts for more than a couple weeks.

      Uu can freeze chestnuts straight from harvest I use zipped freezer bags was chestnuts in cold water freeze straight away in summer dont thaw them bring out frozen pact leave on table 15 mins pierce them and put straight into pre heated oven peel dip in salt and close your eyes and dream of xmas with its flavour lovely

    I have two huge and one not too big chestnut trees in my backyard. I always get larvae in them and when the grubs come out, they are disgusting. How hot is the water for water bath and for how long? And how do you sanitize them? Two years ago, after picking, I put them in the bucket, by the time I check them, there's nothing but grubs. Had to throw them away.

      This year I'm collecting nuts daily. I'm cutting them in half and placing them in boiling water. Stirring removes most shells and when the water returns to boiling I'll take them off the stove, remove the stubborn shells, trim any dark spots and then freeze them in ziplock bags, portioned for eating as side dishes at supper. Boiling will kill any grubs or eggs, just trim any bad spots.

      Yes, I have a half dozen or so producing trees, thirty years on now. These trees drop nuts sequentially it seems which is allowing me time to work on the harvest and prep daily. We do a little subsistence farming and this year our corn was a fail so I'm concentrating on these chestnuts. The grubs have been a turn off and I've let the deer eat the mast from year to year but this year I'm experimenting with the boiling and freezing.

      @@nj1639 Do you know if bake it in low temperature, say 200F, will take care of the bugs and bug egg problem inside the chestnut? If so, for how long? Tks

      I don't know, I've only blanched and then freeze them.

    Hi from Hellas first harvest from the ground 2 goes to hot water 5 ours? 3 goes to hot air? 4 goes to freeze to 0c? Tell me the steps and how time alive the chestnut to freeze thank you

    you spray with insecticide and then eat it?

      From Brittany, France..yes, indeed not acceptable to use insecticide..should not be allowed
