  • Vegan Sushi Rice
    Ingredients:
    1 cup sushi rice
    1 1/4 cups water (or as per rice instructions)
    2 tablespoons rice vinegar
    1 tablespoon sugar
    1/2 teaspoon salt
    Instructions:
    Rinse the sushi rice under cold water until the water runs clear.
    Cook the rice according to the package instructions.
    While the rice is cooking, in a small saucepan, heat rice vinegar, sugar, and salt until dissolved (don’t boil).
    Once the rice is done cooking, transfer it to a large bowl and pour the vinegar mixture over the rice. Stir gently to mix.
    Allow the rice to cool before using it for sushi rolls or serving as a side.
