Japanese is very very wordy, and mostly the subtitles are OK. However they leave out an entire sentence at the end of the "discard everything" part. I think she's saying something like: "As paper is very thin, it's easy to fool yourself, telling yourself: 'ahh, this amount should be fine, right?' ".
That’s just how Japanese works. Sometimes long sentences in English can be said in just a few words in Japanese. Sometimes short sentences in English can take miles to say in Japanese. Just as an example, say someone is talking about going out to lunch with friends. I'm also very sentimental! I tell myself that I dont need objects that hold memories, I can hold them myself. I just got rid of my grandmother's things this way. I dont need blankets or jewelry to remember her love, I will always remember.
