I find that if I put a lid on the pan, that it cooks more of the white without having to flip it.
That’s the stream method. You must cook yours with a good amount of butter or oil in the pan. You either need that or you have to pour a little bit of water around the egg after the white sets, then put on the lid. Steam somehow makes the whites creep up over the top of the yolk.

Over medium with a crispy edge :) Since dealing with parosmia for a couple years now, the taste of the yolk on it's own is funky for me, so I haven't been able to enjoy it for a while. I am a master of omletes and scrambled eggs now though.

In all my years of ordering breakfast, I've only ever had one person get "over medium" right.
I like a runny yolk, but when I order over easy, sometimes the white right around the yolk is runny too which I don’t like. So now I order over medium, but sometimes the yolk is to firm. Guess I should try making my own at home.
I cook on low heat allow the full outer edges to hv a crispy texture/flip 20sec serve with side of butter creamed toast 😋 I make an awesome flank omelet and about 3m before done I place in a low broil oven place white American cheese on top for 1m pull out/flip add covered cheese place bk n until cheese is full melted and has a light brown color on top/edges of the cheese I'm telling you there's no place that mks this it was made up by me 😋 so my kiddo's would eat their eggs because they loved cheese but I added different toppings in the omelet & they nvr knew 😆 they thought it was what I told them baked cheese! When they ate the omelet they received every vitamin naturally and protein! When my daughter asked me why I was cooking their nanny aka my mom grhs 🙏 a flank omelet, she was then 17 and I showed her what they always thought was just baked cheese 😆 she was oh momma really 😆 I said... well you ate it/loved it, just as your brothers did! Now they have the recipe and each will mk several times a week & my daughter mks it for her son 😎. They won't share because they know it is their mommas homemade new take on any omelet! Thanks for sharing but you don't have to be a good cook to cook anything w eggs ev1 likes eggs different from others or the Ole Fashion methods which is in this video 😉. Practice until you get the way you will want any 🥚 cooked aby method of ways!

Since I was little I was told there only 3 options for eggs: sunny side up, over easy and soft scrambled. I dislike the raw yolk taste. Only until 40s (last week), I learned about the existence of over hard eggs. I still don't understand why my mom never cook over hard eggs for me.
Sunny side unless it is on bread and then over soft.

No, there's a fifth type - over done, which is what you're calling "over medium". OM eggs are cooked for a maximum 30 seconds which give you a between state - somewhat runny. And with over hard you pop the yolks before flipping and they're good for egg sandwiches. That's the way we did it at IHOP. From my experience the egg preference was: Scrambled & Over Easy in a clear majority, then Over Medium /Done/Hard/in a ranked three way tie, with Sunny Side and Poached comparatively rarely. Poached were always the hardest. We did not offer soft-boiled. Also, we had to learn how to flip eggs without a spatula and do it twice to serve the most presentable side. If you popped a yolk you had to throw them away and cook them again.
Most places are scared to undercook egg whites, so they teach their cooks to cook over-easy eggs over-medium like the one in this video.
I thought I liked my eggs over-easy until I got proper ones the first time after ordering them like that for 15 years. Turns out I absolutely need the white cooked.
Problem is, if you order over-medium you never get over-medium eggs. You get some abomination that has a half-set yolk. I've gotten a proper over-medium egg on order the first try exactly once.
What are you on about? I always order over medium, and every single time except for once it comes back over easy.

Somewhere between easy and medium for me. I like to put my eggs on a bagel and if its too runny you just make a mess, otherwise runny is great

This is leaving out the froached egg, lightly poached, then coated in panko breadcrumbs and fried to medium perfection.

The key to a good fried egg is letting the whites get firm.. I see so many people putting water on their eggs to harden the whites in their tutorials it’s painful.. we’re making fried eggs guys not poached 😂😅

When I make a sunny side up egg, I’ve gotten into the habit of putting a teaspoon of water in there with a lid on so it steams and cooks the top of the raw whites when the egg isn’t uniform
Sometimes, it's just the natural consequence of making an *_Egg & Cheese Sandwich_* (or Croissant) that the Egg Yolk overcooks while melting the cheese... Especially, if you pile on a lot of different cheeses: But good Bread & Cheeses can sometimes make-up for this *_faux pas_* (mistake).

It's sad 90% of the time I get runny whites and over cooked yolks. I agree a good cook should know but I guess most cooks are too rushed or not properly trained. Best is homemade anyway.
