I’m jealous of anyone with access to an HEB. I really like their 1/2 flour and 1/2 corn tortillas. When I’m in Austin visiting family I always make an HEB run. There are items I just can’t get in the Midwest w/o paying a Covid premium….like the salt lick dry rub. HEB pricing is pretty good too.

Huevos rancheros has been my Christmas breakfast for over 50 years. My Mexican Mom fixed it for our family of 7 growing up in Vancouver, Canada and I have continued the tradition for my family. The hot salsa on the fried eggs (on tostada shells or taco chips) is the most delicious flavor EVER! With refried beans on the side, of course! Merry Christmas to all! Feliz Navidad!

Made the heuvos for lunch. Your refried beans tostada fried egg store salsa cheddar cheese on egg diced jalapeno and chopped avacado. Delicious. Didn't know about rancheros salsa. That s another day.
GREAT RECIPE! Will definitely adopt it. I have been frying My Bacon this way since I learned how to cook at 9 Years old (I'm 64). I also cook My Country Ham this way. IT'S SO EASY and You do get the crispiness as well as LESS SALT/SODIUM. Some People can't eat Bacon 🥓 because of the NITRATES. This water method helps take out some of the NITRATES in Bacon. Hey Mama!...lol I love this recipe. You may already do this, but I add chicken broth/stock instead of water for a little flavor. I like my Rancheros sauce has more juices like you make. EDIT: DOH: I typed this comment before I saw your chicken bouillon powder.....and there you have it.
@buckinjb I was going to say the same thing, but then saw she added the caldo de pollo en polvo. It adds a great flavor to it. My family has always made it like that. Good stuff.

This former San Antonio boy likes a big kick to my salsa, so I do use serrano peppers(plus a little chopped cilantro added at the end to the cooking of the salsa...just adds a bit more flavor.)Good idea about using chicken boullion in place of just salt. I'll be sure to try it next time. Thanks!
I’ll have to try the water method to cook my bacon. I’ve pretty much stopped cooking bacon on the stove top due to grease splattering. Now I only cook in my Breville toaster oven. I lay parchment on top of raw bacon. But always open to new ideas. 💡

You can cook any meat with water instead of oil. I always cook meat like that for my dog to control what she ate. It’s a great way to cut out so much fat
If you are really pressed for time, just a quick hack, heat up a little Tostitos mild chunky salsa in the microwave and throw that on top of your over easy eggs, on top of a cheese omelet to make it a western omelet, what have you.
Yeah, I cheat from time to time, too, but there's no comparing it to good ol' home made salsa done right. Huevos rancheros, papas, refried beans, and for me...a barbacoa taco on the side. To make it officially a San Antonio style breakfast...have it all with a bottle of Big Red.😊

Happy Eggs or Vital Farms eggs from the grocery store have yolks this orange!! They’re expensive but worth it IMO
