Since you are from Texas, there is one of the very few Coptic Orthodox Monasteries in the US in Texas! It's called St.Mary and St.Moses Abbey!

Good documentary but want to know why there is no single black African nun all white looking women?

This is just because the monastery located in Egypt where most of the residents are caucasians, and residents in the very south part of the country are nubian. So, it's mainly because of the geographical location that makes all of the nuns or who seek monasticism are caucasians. Coptic Orthodox church does not reject other races evident by some of the beloved saints who are mentioned in the holy mass everyday are of African or Ethiopian nature like saint Moses the great ( the ethiopian)
