I am an elderly specialist in Renaissance keyboard music. Your question is very interesting. It was the suffocating mores of the 19th century which resulted in musicians generally appearing in penguin outfits. Towards the end of the 20th century penguin outfits became démodé and musicians started wearing all-black outfits, rather like out-of-work waiters looking for employment. Go back to before the 19th century, and it was very different. Secular musicians wore whatever was fashionable at the time. Imagine Handel and his band dressed as disciples of Oswald Moseley!
There is sadly a lacuna in the books on historical fashion that I possess, no section on Renaissance organists! Perched high in their organ lofts, what would they have worn? Did they wear some form of choir dress, such as you see worn in Anglican cathedrals? And when other musicians joined them in the gallery, what did they wear?
And why do they wear what they wear now? Get to know an organist or two, and I think the answer will dawn.

@@michaelackerman8455 Interesting comment. But in this case I rather like the sober discreet way most musicians dress. The music should be the focus, not what the performer is wearing. When you watch a video with Diane Bish (who I think is a very talented musician and excellent organist) her flashy outfits dominate the picture. In contrast, I attended a recital with the great Marie-Claire Alain in the 1980s, she appeared in a simple black dress, sat down and played Bach for almost two hours without interruption. It was a real highlight!
