Galawat kay kabab:
Ingredient:
Beef Mince 500 g
Coriander powder (roasted) 1-1/2tbsp
Small cardamom (powder) 1tbsp
Papaya (paste) 1-1/2tbsp
Ginger garlic paste 1-1/2tbsp
Aniseed (powder) 3/4tsp
Big cardamom (powder) 1/2tsp
Fried Onion (grinded) 3tbsp
Green chili(grinded) 2tbsp
Rose petals (dried) 2tbsp
Gram flour (roasted) 2tbsp
Yogurt (water drained) 2tbsp
Clarified butter for frying
Onion rings for garnishing
Method:
In chicken mince except for onion rings and clarified butter crush all the ingredients. Now set the mince for at least an hour.
Then shape them into kabab and heat clarified butter to shallow fry. Serve with onion rings.
Chicken Bharta:
Ingredients:
Chicken(lengthwise) 400 grams
Chopped onion 2
Ginger garlic paste 1 tbsp
Cream 4 tbsp
Cashew nuts paste 2 tbsp
Yogurt ½ cup
Small cardamom 4-5
Cumin powder ¾ tsp
Butter ½ cup
Oil 4 tbsp
Dry fenugreek 1 tsp
Salt, chilies as required
Turmeric as required
Bay leaves 1
Boiled eggs 2
Green coriander, green chilies as required
Boil chopped tomatoes 2
Green chili 2-3
All spices powder ½ tsp
Method:
Butter and oil heat and fry small cardamom ,bay leaves and onion fry .now add ginger garlic paste ,tomato ,green chili ,salt ,turmeric and yogurt add and masala roast .then add chicken ,all spices powder ,cumin powder ,dry fenugreek ,cashew nuts paste and 2 tbsp of cream add and mix then leave on dum for 5 minutes .now dish out and garnish with cream ,boil eggs ,green chilies and green coriander and serve .
Roasted Tomato Garlic Chutney:
Ingredients:
Tomatoes 4
Green chilies 4
Garlic 4-6
Mustard oil as required
Chopped green coriander 2 tbsp
Salt to taste
Cumin powder 1 tsp
Lemon juice 2 tbsp
Method:
Roast tomato, green chilies and garlic with skin. Let it cool and remove skin. Add salt, cumin powder and lemon juice grind well. Add mustard oil and chopped green coriander mix well, serve. - แนวปฏิบัติและการใช้ชีวิต
