  • Hey all pickle lovers and Friends, Here is a simple Andhra Avakyi Pickle {Mango Pickle} mango avakaya or avakaya pickle is a spicy, robust pickle made with raw mangoes . A very easy pickle with few ingredients, no Cooking , no Fire Version. This pickle last for 1 year , if proper care is taken. no Refrigeration needed, Pickling is an art and once you get the knack and experience of preparing pickles, its not difficult.
    you are advised to use these oils only for better Taste
    Gingelly oil or Ground nut / Peanut oil

    Mango Varieties and Avakaya Variants!
    Collector Mango, Kolamgova, Pariya and Rasalu are the top choices of mango varieties for the Avakaya. Available in Andhra and Telangana regions.
    In other parts and Kerala you may use any good pickle making Mango.

    Precautions to be taken during the pickle making process:
    - Make sure that the area where the pickle is being prepared is clean and free from water or moisture
    - Once you mix the pickle ensure that you do not rub your fingers on any part of the body like nose, eyes chin etc . As the hot red mix, may or will cause a burning sensation.
    - After the pickle mixing and packaging process is over, wash your hands well with soap or hand wash. And later keep it dipped in cold water for some time, to numb the burning sensation. Due to the high amount of chilli powder and other ingredients in the mango mix, your hands tend to burn
    - Ensure the cut mangoes have the hard part of the seed (hard shell) attached to it. If this hard part looses from mango pieces do not use them in this pickle. As it spoils the pickle, you may take is very easy, in order to avoid wastage , but, its for sure , your pickle spoils.
    So, take care while cutting mango pieces, they should be of same size and see that the hard part of mango ( mangaandi or Tenkai ) is attached to your mango pieces, u need to sort it out, very carefully.
    - Place this pickle in sunlight for 3 days , let the oil come up before use.
    - Keep the packaged pickle in a clean, dry and dark place. After 2-3 days, mix it well and transfer a small quantity in a small glass bottle or any other neat container for regular use.
    - Never use pickle directly from the main Container.
    - Use a clean and dry spoon or wooden spoon to transfer the pickle into a smaller container.
    - Minimum opening of the lid of the pickle jar is better.
    - This stays Good for 1 more, with out refrigeration, best thing is keep it in a dry safe place.
