Although NYC has amazing food. I’ll have to say LA edges NYC for the fact that you can get the best Mexican food outside of Mexico (Sonora to Oaxacan), Korean, Thai, Taiwanese, Peruvian, Japanese, Chinese (all regions from Hong Kong to Szechuan), El Salvadorian, Persian, Armenian, Burgers etc in its vast landscape. Once you figure out LA in it’s sprawled complexity, you’ll realize what I’m talking about. But no hate on NYC at all.

They own SO many establishments nation-wide and dominate the Chicago food scene (delicious food, don't get me wrong). Restaurants that need reservations, have a reward membership, ofc sleek decor and website. One of their celebrity chefs (Stephanie Izard) created a sauce line that's now in Whole Foods.
Regarding making kimchi, it all depends on how old school you want to go. My mom makes her own fish sauce so she starts years in advance of purchasing the Napa cabbage.
