借此机会来分享:只需浸泡一个小时糯米(2杯),第一回蒸的糯米,水不宜多,(就把浸泡水倒掉可也),20分钟,大火蒸,第二回蒸的糯米,水份 像煮饭一样,把炒香的料倒入一起蒸20分钟,大火。临吃之前倒入调味料,好食品上桌了。

臘味糯米飯:
材料:
糯米2膠嘜
臘腸2條
膶腸2條
蝦米50克
蔥1條
處理:
1. 糯米,清水浸4~6小時,但注意不要大力攪動它。
2. 臘腸及膶腸,滾水浸,去油膩。
3. 蝦米,清水浸2分鐘。
4. 糯米已浸水6小時,小心用清水沖洗乾淨。
5. 由於糯米已浸清水6小時,只需加1膠嘜清水就夠了。
糯米與水比例:
2份糯米:1份水。
6. 放糯米在玻璃盤內。
7. 放臘腸及膶腸在糯米上。
8. 蝦米,清水沖乾淨,放糯米上。
烹調:
1. 大火在鑊中煲滾1鑊水,蒸糯米1小時。
2. 要預早煲好1煲滾水,以備蒸飯中途要加入滾水。
3. 大概蒸了30分鐘,要加滾水落鑊,再繼續蒸。
4. 蔥,切粒。
5. 糯米飯,已蒸了50分鐘,取出臘腸。
6. 在糯米飯內,加入:
a. 糖半茶匙
b. 雞粉1茶匙
c. 生抽1湯匙
撈勻。
7. 臘腸,1條切開4小條,切細粒。
膶腸,1條切開4小條,切細粒。
一同放入糯米飯撈勻。
8. 放糯米飯落鑊,蒸餘下的10分鐘。
9. 餘下的臘腸及膶腸,切薄片,放糯米飯側邊。
10. 灑上蔥粒。
11. 完成,可享用。
Steam glutinous rice with Chinese sausages:
Ingredients:
Glutinous plain rice 2 measure cups
Chinese sausages 2 Nos.
Ducks' liver sausages 2 Nos.
Dried sea shrimps 50g
Green onion 1 No.
Preparation:
1. Glutinous plain rice, soak in tap water for 4~6 hours. Do not stir it with force.
2. Chinese and ducks' liver sausages, soak in boiled~up water to remove grease on them.
3. Dried sea shrimps, soak in tap water for 2 minutes.
4. Glutinous plain rice has been soaked for 6 hours, rinse carefully.
5. Glutinous plain rice has been soaked for 6 hours, just add 1 measure cup of water is enough.
Ratio of glutinous plain rice and water, 2:1.
6. Put glutinous plain rice in glass ware.
7. Put sausages cubes on top of glutinous plain rice.
8. Dried sea shrimps, rinse then put on glutinous plain rice.
Steps:
1. Boil up a pot of water at high flame in wok. Steam glutinous rice for 1 hour.
2. Boil up another pot of water.
3. Add boiled~up water into wok after 30 minutes, continue steaming.
4. Green onion, dice in cubes.
5. Glutinous rice has been steamed for 50 minutes, take out the sausages.
6. Glutinous rice, add
a. Sugar 0.5 tsp
b. Chicken powder 1 tsp
c. Light soya sauce 1 tbsp
Mix well.
7. All the sausages have to be diced into small cubes. Mix well with glutinous rice.
8. Put glutinous rice into wok, steam the rest of 10 minutes.
9. The remaining sausages, thinly sliced, put on side of glutinous rice.
10. Put green onion cubes.
11. Complete. Serve.
