a few tips for your next schnitzel trial:
first of, try mixing the batter for the schnitzel with lots of salt and pepper, and maybe paprika and garlic powder. it elevates the taste of the schnitzel a lot.
also, butter your mash potatoes! use a 60/40 ratio of butter and potatoes, use a nice amount of nutmeg and again, salt and pepper.
and also: SERVE YOUR SCHNITZEL WITH A SAUCE.
the most popular options are: -zigeuner(jipsy)schnitzel, with a spicy and sweet paprica sauce,
-rahm/jäger(hunter's)schnitzel with a mushroom based cream sauce
also, double dipping the schnitzel in eggs is right, but you actually have to dip them in starch first, so that more egg can actually adhere to the pork chop, so that the batter will actually form air bubbles which will give your schnitzel a nice contrast of consistencies.
also, salt your cucumbers, maybe even put a little dill and vinegar on them.
in germany its all about the spices (if you wanna call salt and pepper, garlic powder and paprica spices) and these beginners here obviously used little to none of them, which is a very american mistake to make.
