How to Make Beet Hummus & Mouthwatering Sheet Pan Roasted Veggies

    I love the bright color of this slightly sweet beet hummus. It’s slightly sweet, but not too beet-y. A deliciously healthy beet hummus, very easily made by placing all ingredients in the bowl of a food processor.
    Our sheet pan roasted vegetables are super yummy and easy to put together! From oven to table in less than 30 minutes. If you love roasted vegetables this is a great way to get your daily dose of nutritious veggies.
    Beet Hummus Ingredient:
    • 440 g over cooked chickpea, drained and rinsed
    • 140 g cooked beet
    • 90 g tahini
    • 3 tbsp. lemon juice
    • 2 garlic cloves
    • 1 tbsp. olive oil
    • 1 tsp salt
    Instruction:
    1. Drain and rinse cooked chickpeas. Remove any loose skins, but no need to peel the rest. Transfer chickpeas and garlic to a food processor. Blend for 1 to 2 minutes until you have a smooth puree, scraping down the sides as you go.
    2. Add the cooked beet, tahini, lemon juice, olive oil and salt. Blend until smooth, scraping down the sides with a silicone spatula as you go. Check the consistency. To make it a bit looser, add 1 tablespoon of ice water and blend again. If you prefer a thicker texture, omit.
    3. Transfer the hummus to a large plate and use the back of a spoon to make waves or to make a well in the center. Drizzle with olive oil in the well and garnish with sesame seeds and fresh mint.
    4. Enjoy!
    Sheet Pan Roasted Vegetables Ingredient:
    • 2 cups broccoli
    • 2 cups cauliflower
    • 5 small sized potatoes
    • 1 medium red onion
    • 1 cup cooked chickpea
    • 2 tbsp. olive oil
    • 1 tsp garlic powder
    • 1 tsp onion powder
    • ¼ tsp smoked paprika
    • ½ tsp pul biber
    • 1 tsp salt
    Instruction:
    1. Preheat oven to 200°C. Line a large baking sheet with parchment paper. Set aside.
    2. Cut the broccoli, cauliflower, potato, and onion into bite-sized pieces. Place all of the vegetables with chickpeas on the baking sheet.
    3. Mix garlic powder, onion powder, paprika, pul biber and salt together.
    4. Drizzle olive oil over the vegetables, then sprinkle them with spice mixture. Stir the vegetables, to ensure they are evenly coated in olive oil and spread out into an even layer.
    5. Roast in the oven for 15 minutes. Briefly remove from the oven to toss the vegetables, then roast for an additional 15 minutes or until they start to turn brown and the veggies are cooked through.
    6. Remove from the oven and allow them to cool slightly before serving.
    7. Enjoy!
