Mangalorean Mackerel coconut curry| Bangude Gravy

- #### For the Masala Paste
- 1 cup grated fresh coconut
- 8-10 dried red chilies
- 1 tablespoon coriander seeds
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 1/2 teaspoon fenugreek seeds
- 1/2 teaspoon turmeric powder
- 6-8 garlic cloves
- 1 small onion, chopped
- Tamarind - a small lemon-sized ball,
#### For the Curry
- 4-5 mackerel fish, cleaned and cut into pieces
- 1 medium onion, finely chopped
- 2 green chilies, slit
- 2 tablespoons coconut oil
- Salt to taste
- Fresh coriander leaves for garnish.
Instructions
#### Preparing the Masala Paste
1. Grind Masala coriander seeds, cumin seeds mustard seeds, and fenugreek seeds
grated coconut, dried red chilies, garlic, chopped onion, turmeric powder, and tamarind pulp to a smooth paste using a little water. Set aside.
#### Making the Curry
2. Sauté Onions: Heat coconut oil in a deep pan or pot. Add the finely chopped onion and sauté until golden brown.
2. Add ginger and Green Chilies onion: ginger curry leaves onion and slit green chilies. Cook until the golden brown
3. Add Masala Paste: Add the ground masala paste to the pan. Sauté for a few minutes until the oil starts to separate from the masala.
4. Add Water: Add enough water to achieve the desired consistency of the curry. Bring it to a boil.
5. Cook Fish: Add the mackerel pieces to the curry. Season with salt. Cook on a medium flame until the fish is cooked through (about 10-12 minutes). Be careful not to overcook the fish.
6. Adjust Seasoning: Check the seasoning and adjust salt if needed.
#### Serving
1. Garnish: Garnish with fresh coriander leaves.
2. Serve: Serve hot with steamed rice, neer dosa, or roti.
