Damien Black was one of the most hellacious final bosses in not just a boxing game, but any game. I remember trying to beat him with most of the roster, and every fight was a even worse nightmare than the last.

Tough question, I suppose to be fair you'd need about 9 from each of the 3 games
Gotta definitely include Afro Thunder, that's a certainty, but everyone has their favourite! It would be difficult to properly get right!
