We always use HLB Scale for choosing emulsifying agents for our emulsions
Basically emulsifying agents reduced interfacial tension of two immisible liquids
Emulsifying agents have less than 8 HLB Value are used for w/o and more than 8 for o/w

Emulsions are colloids, which are homogeneous mixtures consisting of particles larger than molecules that scatter light, but are small enough that they don’t separate. Emulsions consist of two parts: the dispersed phase and the dispersing medium (continuous phase).

Pharma is a very good field, but it's not as a subject in UPSC, after B pharm you can try UPSC with Chemistry or Biology
