Hi Heather. You are describing Canadian "back bacon", which is also made from pork loin, brined the same way, but smoked afterwards. Yes, you are right that back bacon, has a stiff ham like texture 🙂

@@catevanscuisine Yes, it can be tough at times. I have learned to not let it bother me anymore because that just adds to my stress. It gets done when it gets done and if it doesn't then it wasn't meant to be. When I ask God during prayer for the strength and endurance to do something and I don't get what I ask for, then I take that as it wasn't that important, or that it could wait. I'm learning more and more to rely on his strength and not my own. Blessings on your day my friend ❤🙏
