    A few notes about this performance;
First is, Victor was actually an EXTREMELY talented piano player and had a very good memory. Most of the piano playing in this performance was not actually read from the sheet music he was "looking" at. They were just short snippets of songs he already knew, arranged into the routine.
Second; the "page turner" was actually his son.

Negi is the shortened version of the word onion in Japanese.

Fun to see a few reactions to him, more people need to experience his stuff. By the way, it's pronounced "BORE-gah" with a hard "g." He was Danish, hence the accent.

Just saw someone already pointed this out in your last video, sorry to belabor it haha. If you can find a good recording of him doing a supposed "Mozart Opera," that's one of my favorite routines.

      It's pronounced with a soft g, actually, only it's a Danish soft g which sounds like a w.

I'm not going to say that was his son as it was already said 6 times. I will say though, that I believe I had once heard that his son does read music My mom, sister and I were fortunate that my dad believed in exposing us to a bit of culture. He had a good-paying job so when he decided to take us to see some sort of performance he got us front-row seats. Of course, one of the shows was Victor Borge. That was one of those shows during, and sometimes after, your eyes were full of tears from laughing so hard. A few months after my dad died, we had been working hard taking care of all the things that needed to be done after the loss of a family member. It was a lot of stress, and very tiring. I discovered that Red Skelton was to perform locally. I asked my mom, "If I buy tickets to see Red Skelton, would you want to go?" Her answer was immediate, "Oh, yes, of course!" I could not get front-row tickets but we were still seated pretty close to the stage. Red was even funnier than Victor, and yes, we laughed so hard we shed tears. Even though Red was getting on in years he put on a great show. His humor even started before he came on stage. All of a sudden the theater's PA system came on and a very familiar voice was heard, "I've been asked to make this very important announcement. Will Mr. and Mrs. __________please call home. Your babysitter wants to know where the fire extinguisher is." Red was only supposed to perform for an hour and a half. When he reached that point he came to the edge of the stage and asked if we were all tired. Of course, everyone in the audience yelled "NO!" He said, "Okay then..." and continued the show for another half hour. That was the thing about Red, he loved his audiences so much, and it was important that they laugh. He ended the show as he always had, "The time has come to say good night,
    My how time does fly.
    We’ve had a laugh, perhaps a tear,
    and now we say goodbye.
I really hate to say good night,
for times like these are few.
I wish you love and happiness,
    In everything you do.
The time has come to say good night,
    I hope I’ve made a friend.
And so we’ll say “May God bless you,”
    Until we meet again."
Of course, as I remember it, he said just "May God Bless."

I have the entire performance/show this is from on DVD, there are multiple brick jokes like "negi, negi"(he's saying onion* in Japanese, he's joking that the page turner's breath stinks) & "Long time no see". I know someone already told you the page turner is his son but it's really funny if you saw the entire show, at the end he thanks his wife & kids for giving him a reason to be there. After some playing he mentions "And that stupid page turner in the tie was one of them." before continuing to play the piano.
*Negi is a spring onion/long green onion but he's focusing on the fact that it's an onion & not what kind of onion
