do you know the point of "Resting"? It is not necessary to rest a brisket if it is fully cooked. Resting is note really resting, it just allows for more carry-over cooking to further tenderize the meat...
Nice. I'm going to Sam's today (closest Costco is 2 hours away) and I've been considering picking up a brisket if they have a Prime one that looks marbled well, so maybe this video is a sign. I haven't cooked one in 2 or 3 years.
Hopefully this will be taken as constructive criticism. Everything about your video is strange. The smoker, the choice of meats, the seasoning methods, the finishing, the analysis. I must have missed the wrap up comments of the comparison of tastes, quality, texture, flavor, and experience. I could not do what you do, but ..... BTW I hate it when it seems the only reason for a review is to PUSH products. I make my own from scratch for every cook.

The flat is always hard to get right. With the said flat on yours looks more like break apart (over cooked) than pull apart.
I think you got lucky with Wilk Fork. I've gotten as much or more fat out of it as you did for the Sam's.
