Feijoada was a dish created by slaves with leftover pig meat, when I mean leftovers I mean tails, hooves, ears and etc. Which in my opinion really defines the dish, my favorite piece are ears. Although nowadays we add many others parts of the pig in the stew, the original recipe was like that. I would recommend adding some ears and hooves next time, I guarantee it will be an excellent dinner. As I said you rocked at it, just adding historical context and the reason why you might not have used those parts is because nowadays they usually tend to use finer parts. As gourmets use what they have at disposal.

But you made it by the book, which is great for outsiders. Also, do not use a ready made farofa, make your own. We rather make shortcuts on other steps, like simmering. If you are going to wait 2 hours (like slaves did with huge cauldrons, taking left-overs from the Lords kitchen), you might as well make your own farofa, with mandioca flour, golden onions and salt. Also! We serve feijoada in a little pot, the same for farofa, leaving only dry things like rice and leaves in the plate.

We actually use other variates of sausage, called “Calabresa” and “Paio” plus bacon and “carne seca”, a Brazilian style salted beff jerky. The traditional recipe also includes pork cuts such as the ears, the feet and other collagen rich parts, but I personally do prefer only using the noble cuts. That being said, congratulations on your video and thanks for trying and sharing about Brazilian food.
If you find the ingredients, you gotta redo it, man. Game changer. I think "calabresa" is Italian sausage. The "exotic" pork cuts should be easily found pretty much anywhere in the world. Any butcher probably has them.

Além disso, o ácido cítrico da laranja ajuda na digestão, melhorando a quebra dos alimentos e liberando melhor o ferro. As fibras na verdade até diminuem absorção no geral, mas são boas para a motilidade do estômago e menos dor de barriga depois de um alimento pesado.

My boyfriend is half Brazilian and his mom makes this at least once a week! I’m such a huge fan and learned how to make it from her. Now we live in northern Maine and it’s a big harder to get the ingredients for the stew, but we’ve learned to improvise with regular smoked sausage and smoked pigs feet (luckily, this tiny farming town actually seeks pigs feet!)

Dont put Vinagrete in Feijoada this thing is most for salads and barbecue meat. it will obvious not taste good! because of it... and don't forget to add PAIO in feijoada you will not regret but add a lot broth natural from feijoada. with rice a lot Brazilian loves it. when there a lot broth and chopped cabbage just fry in the pan oil and garlic just mix it that is it will tasty with feijoada but i prefer cabbage chopped without fry.

You did a very good job, and it looks tasty. But if you're up to making this dish again or if you're up to another video about feijoada, I'd recommend using a pressure cooker when initially cooking the black beans, the higher temperature breaks down the beans, it softens them, makes a thicker broth and enhances the flavor (otherwise it can taste a bit bland) and than later add the meats and finish on a normal pan or just with the pressure cooker open, reducing the broth to the desired thickness (dont know if thats the correct way to say it, I'm not the best with culinary lingo). Onions are good, but not everyone uses them, but above all, fry the garlic and onions first, this is almost a universality in brasilian dishes, very rarely we add them in the midle of the process.
It’s so good, I like your recipe. But, I'm Brazilian and I'd like to make a correction to the recipe, we don't use “chorizo” we use a sausage called “paio” it's Portuguese, we also use the pig's foot, ear, tail and rib. We bought the pork salted and dehydrated, removed the salt and cooked it separately.

Congratulations!! So nice to see a foreigner cooking Brazilian dishes! Personally, I like to cook the black beans alone in a pressure pan for one hour. They become smoother this way. Then I mix it with the meat cuts just like you did. Also, it is very important to discard the water that the beans were soaked in overnight. Do not use it to cook anything. As the beans are soaked, they start to germinate, as if they were to become a plant. This process releases some metabolites in the water that are not good for our health. Specially phytic acid. It bonds strongly to iron, calcium and zinc, inhibiting its absorption in the small intestine.

Just remember to desalt the jerky by putting it in water and changing the water every 30 minutes for 3 hours (at least). Homemade farofa is way better than the yoki one (fight me, Brazilians. I'm stating a fact), but I don't know how easy it is to find cassava flour abroad. Feijoada has a very important legacy of the enslaved African's struggle in Brazil and it is always so nice to see that piece of Brazilian culture thrive not only in Brazil but around the globe. But if you're up to making this dish again or if you're up to another video about feijoada, I'd recommend using a pressure cooker when initially cooking the black beans, the higher temperature breaks down the beans, it softens them, makes a thicker broth and enhances the flavor (otherwise it can taste a bit bland) and than later add the meats and finish on a normal pan or just with the pressure cooker open, reducing the broth to the desired thickness (dont know if thats the correct way to say it, I'm not the best with culinary lingo).
Onions are good, but not everyone uses them, but above all, fry the garlic and onions first, this is almost a universality in brasilian dishes, very rarely we add them in the midle of the process.

It’s so good, I like your recipe. But, I'm Brazilian and I'd like to make a correction to the recipe, we don't use “chorizo” we use a sausage called “paio” it's Portuguese, we also use the pig's foot, ear, tail and rib. We bought the pork salted and dehydrated, removed the salt and cooked it separately.

Congratulations!! So nice to see a foreigner cooking Brazilian dishes! Personally, I like to cook the black beans alone in a pressure pan for one hour. They become smoother this way. Then I mix it with the meat cuts just like you did. Also, it is very important to discard the water that the beans were soaked in overnight. Do not use it to cook anything. As the beans are soaked, they start to germinate, as if they were to become a plant. This process releases some metabolites in the water that are not good for our health. Specially phytic acid. It bonds strongly to iron, calcium and zinc, inhibiting its absorption in the small intestine.

Really good job 👍🏻 , usually when I make it I also like to take a bit of beans (maybe 1/5th) and some of the cooking liquid and blend them , that way your end result will be creamier and less runny.

Just remember to desalt the jerky by putting it in water and changing the water every 30 minutes for 3 hours (at least). Homemade farofa is way better than the yoki one (fight me, Brazilians. I'm stating a fact), but I don't know how easy it is to find cassava flour abroad. Feijoada has a very important legacy of the enslaved African's struggle in Brazil and it is always so nice to see that piece of Brazilian culture thrive not only in Brazil but around the globe.
