Stuffed Nduma Balls (Arrow Roots) - Jikoni Magic

  • Ndumas (arrow roots / taro) in this video recipe are stuffed with mince meat and this gives them a pleasant twist.

    INGREDIENTS:
    600g arrow roots
    500g mince meat
    2 cloves garlic
    1 onion
    1 tomato
    3 bunches dhania (coriander)
    1/2 hoho (green bell pepper)
    Pinch of freshly cracked black pepper
    1 beef chilli cube
    1tsp Royco
    3 cups bread crumbs
    60g Unsalted butter
    1Tbs curry powder
    2Tbs vegetable oil

    my kids love nduma. this is really a good recipe for it, enriched and looks expensive, nice for my visitors. i will definitely try this. awesome. nice job.

      Margaret Wanja Thank you. The reason I love these ndumas is because they are not your ordinary everyday version we are used to. And, plus, they make a great and unique appetizer when entertaining because your guests will be jazzed by the crispy exterior, soft and moist nduma layer and the extremely tasty mince meat core.

    i love your cooking gal!! I tried making the pumpkin chapos and mine didn't turn out that soft. I didn't add butter because i don't like it and i thought thats why they were not soft. But they were not bad and i loved them. Thanks lot.

      matawa08 Hi, thanks for trying out the recipe and the feedback. I don't know if you are in Kenya, but, you could try blueband... or if not maybe try using ghee. However, they can also be very tasty as well even with just the pumpkin puree.

    great recipe. I love Anything Nduma. Could I substitute cornmeal for the outer layer instead of breadcrumbs?

      +Katherine APIOU There's just something about ndumas, 😍😍😍 love them as well. Yes, you can use cornmeal it's an excellent substitute, if you at all you are gluten intolerant, if not you could also try semolina flour, it has the same gritty texture.

      +Irene Mwaniki Hi, I know of guys who bake using a charcoal jiko and sand while there are others who use pressure cookers. I have never attempted any of the methods so I can't give a conclusive answer.

    it looks yummy.do u fry the nduma immediately after taking out of the frizzer.and when u say butter do u mean blueband

      Hi, I meant just that, butter. I hardly ever cook with Blueband. You could also use Blueband if you wish, just pay closer attention to your salt.

    I really want to try this, looks yummy - can I skip the butter though? Will it seriously affect outcome? (My mom can’t have butter)

      No it won't affect the outcome. Butter in this case is more for the flavour than any other purpose.

    actually here in Lebanon there is arrow_roots but blv me you when I say I didn't know any recepie of them..Thanx 2u cos now I have 2 try this.

      +faith mukoya Never tried them in the oven. I would bake them at 170C for about 20 minutes and check. It would also help if you could spray some oil on the bread crumbs to help them in crisping up.

      +Mathu Macharia Thank you. Now, if you use flour instead of breadcrumbs you will end up with a smooth nduma as opposed to one that is rough.

    It looks great! Question..once i hade the best chicken ( and allso pilau rice) in my life..like ever in Kenya (Nairobi city). The chicken was like a type of yellowish in colour, from the herbs and spices. And i think the chicken was roasted on fire. Can you please PLEASE make that Kenyan yellowish roasted chicken for me? So i can try it here in The Netherlands. I went to that road restaurant a couple times PER DAY, to buy a piece. It was verry tasty,i went back to Europe missing Kenya and the food and allso the Kenyan chicken! Asante sana :)

I love your cooking so much im gonna have a Kenyan theme birthday party for my little girl who is turning 1 year old soon (next month) her name is Mwelu after my mother,my son is named Musyoki after my uncle. With the colourfull African female dresses and African blouses for the men and children who will atend. Allso im gonna try some of your food to cook for the guests.       Hi there, thanks for thinking along with me! I really am not sure since i looked at the recipe and it was like a rice with parts of chicken. I ate it with beef pilau rice. Not as a recipe but i ordered two seperate things. It could be thou but im not sure. Ow how i miss Kenyan cuisine. Now more then ever since i lost my Mom in 2015.

    I love this recipe.Unfortunately I'm from the United States and I've never heard of ndume.It seems everyone who is commenting,really loves ndume.Im wondering can I substitute using another vegetable.

      It's also known as taro root if I'm not wrong. In Kenya we also call it arrow root. If you google for any of these two names you'll be sure to find out what it looks like. You could substitute and use potatoes although the taste is completely different.

    Hi Jikonimagic... i tried the stuffed nduma balls yesterday and the results were not pleasing...after coating the bread crumps i stored in the fridge for an hour...could that be the reason they got soft and not crunchy as expected? please advise

      I have a question, were they soft right after getting them off the hot hot oil? If yes, then, perhaps your oil was too hot and they browned much faster than they should have. Try and reduce the heat because you want them to warm up slowly from the inside out as the coating crisps up.
      Another issue might be that you left them for too long after removing them from the heat. They will release steam and after a while it will cause them to soften.

      +Soni Muthoni You can do that. I just don't use eggs in some of my dishes because some of my family members are deathly allergic to eggs. If they are partaking of the meals then I leave them out completely.
