      My grandmother from Italy used to make fried zucchini all the time, especially in the summer. Really good stuff!!

    Being of Middle Eastern ancestry, most of the meals Mom made had that influence. Squash was mostly made stuffed with lamb and rice, dried mint, and boiled with crushed tomatoes. It's delicious, but when I tried fried squash some time in my 30's, I loved it!
    I use corn meal with not liquid, just as you did, and now that I saw this, I need to make it tomorrow.

    I went through a phase a few years ago of frying whatever vegetable we had on hand. We found a lot of things we liked that way.

    My dad loved fried squash more than anything and we always had a garden so we had it often. Mom did the medallions and the old man would eat them about as fast as she'd get them out of the pan. I love them too and make my own often. Mom just used cornmeal to bread hers but I like using just plain ole flour with some pepper and garlic powder. I salt them to taste at the table.

      Lordy be how I miss my dear Mom. Mom would always make me fried green tomatoes. Mom passed away in 1998 she was a country girl and man those brown beans, wilted lettuce, and squirrel gravy just to mention a few and the fried green tomatoes. God bless you Moma.

    We would eat fried squash when I was little. I haven’t made it in years. Dad liked to grow yellow crookneck and green zucchini. I prefer the zucchini. Unfortunately my husband and kids aren’t big summer squash fans unless it’s in the form of zucchini bread. I will have to fry up some just for myself soon.

      Have you tried making zucchini noodles? It’s the only way I can get the ‘others’ in my family to eat squash.

      I find it has a lot to do with how thick I cut them, how long I cook them (not very) and most of all what sauce I put on them. So far homemade teriyaki seems to be the best!

    I’m Italian and we always eat all kinds of squash (zucchini, etc) the same way you do-it’s excellent! Another thing I do sometimes I make a garlic, Parmesan cream sauce to pour over it-like an Alfredo sauce. Give it a try!

    I grew up with the individual pieces fried one at a time. When my chidren were old enough to eat squash, I would have our two kids and my husband standing over me eating squash as fast as it came out of the pan. The squash rarely made it to the table with the rest of the meal. I'm growing squash and zucchini this year and I can hardly wait to fry up some. I'm widowed and alone now with my kids living an hour away, so it won't be nearly as much fun since there will be no one to stand over me while I'm frying. Goodness, I'm going to have fried squash, sliced tomatoes, fresh green beans, corn on the cob and hot cornbread. Wish you and I could sit down and enjoy it together. Diane in NC

    We have SO much yellow squash from our garden right now. I cut it into rounds and fry it in a cast iron skillet just like you do. I do dip it in buttermilk before dredging in cornmeal and flour. It gives it just a tiny hint of tanginess. If I don't have buttermilk, I skip that step. Enjoyed the video. TFS. ~ Betty

    My mama’s side of the family used cornmeal for a coating. Dad’s side used flour and fried the squash with onions. I never took sides. I love both!😋

      Fried yellow squash is a summer favorite of my family❣️ We cut it round & we batter the squash in meal & small amount of flour salt & pepper & fry until brown on both sides❣️🥰 Sometimes I fry vidalia onions with my squash. My daughter prefers it without onions ❣️🥰 I LOVE fried fat back fried silver queen corn & sliced garden ripe tomato onions & cucumber salad & skillet of hot buttered cornbread❣️❤️🥰 BEST Supper EVER❣️🥰

    Now you're taking me back, pan fried squash, was a common side to a meal, as was pan fried cabbage and corn with pork chops.

    My grandmother used to make green squash (zucchini) fritters with a savory batter and diced squash. My dad made them as well. His uncle taught me to put maple syrup on them, and that's how I make them for our family. I learned them as the Italian name (pronounced 'pee-too-eelies'...no clue about spelling or dialect). This video reminds me of that recipe and the connections we have with food and family. I really like this channel and thanks for sharing!

    I like fried squash. I grew up in S. Vermont. We had a huge garden every year. We were also blessed to have a Rhubarb patch, raspberry patch, apple trees, pear trees, etc.. My mother canned, froze, pickled anything and everything, she could. I think she put up about 900 to 1,200 jars a year. Nothing like fresh food!

    my Granddad had a truck patch and always grew squash and zukes. I loved it and could eat myself sick on it, but never ever lost my love for it. Grandma would slice it about 1/4" thick and fry it like you. She'd lightly salt it after it was fried. It was so good. We often had zukes that were a little bigger than optimal and when Grandma cooked those bigger slices, it was like a steak dinner!

    If I make the main dish in the oven I do the squash on a cookie sheet there. If the main dish is done on the stove I fry it like you did ... and sometimes don't even flour it. However I do it, squash is easy to prepare, picks up an improved flavor (my opinion) and quickly gives you a great side dish.
    I like the fried green tomatoes and fried eggplant ideas too.

    My mom never made fried squash, but she did make fried zucchini - she'd cut it in quarters, lengthwise and coat the long "wedges" in the type of flour you use. Sometimes she'd put some paprika in the flour. We all loved it.

    Yes! My grandmaw, great-grandmaw, and aunts all did fried squash. Sometimes they cut it in little cubes and added little cubed potatoes to the mix and fried them all together!! Yum! It’s just good! Of course there were usually purple hull peas, onion, tomato, and cornbread.

    Never had squash, But I finally had zucchini many years ago, and loved it so much, my biggest regret is not trying it sooner. There is so many foods... vegetables mainly that i would not try that I wish I had.

      @@CelebratingAppalachia I am very picky, and yet, simple. When I enjoy something, and someone wants to cook it for me, its so easy I hope they aren't so overworked and hate doing it. Me personally, will go out of my way for someone, no matter if I don't like the smell of something cooking, would happily make it for them.
      When a video posts, which I look for every time I'm online, I click right away, and "LIKE" because I know it's going to be awesome!!!!

    I have not had fried squash, I grew up in Northern British Columbia, I don't think I have even seen that type of squash in a grocery store. I now live in Central Alberta and no squash that looks like that. I have seen okra tho!! I truly enjoy watching you teach us!! Thank you!!

    I grew up on the scramble. Everything else was the same. Squash are so good that they don't need much seasoning.

    My momma always scrambled it- omg SOOOO WONDERFUL! Myself, I have always done it like you- in the rounds
    Grew up on fried okra, fried squash, fried taters, and pinto beans and turnip greens
    I took it all for granted when I was younger- now that my parents are gone- I CRAVE IT!
    I’ve learned how to prepare it now. 😀

    I can't imagine anyone not having had fried squash. Growing up and even now, I could make a meal off of fried squash and maybe some fried onions if I don't have spring onions.

    We love fried squash even squash casserole. My daddy was a Baptist preacher who didn’t like fried chicken but he did like fried squash so that’s what we ate.

    If you put a couple tablespoons of cornstarch in with your dry mixture, it makes it so much more crispy. It actually crunches when you bite into it and chew it. Someone gave me this tip last summer and I've used it ever since. I'll never fry it without it again. I love fried squash. Well, I love it any way you can cook it!

    I love this video..I was the fried potato guy in my family..yes no matter how many people we had to supper they insisted I cooked the potatoes. And even if we were asked to dinner at relatives homes I was still asked to cook my fried potatoes I only turned them once .and everyone loved them .toss some onion in at the last 4 minutes and thats it.I learned to do this from a hunting buddy when I was very young ..his dad taught him and his dad taught him

    Fried squash is delicious! Never thought to cut it like Pap liked it. So much easier for a family. I learned how to make a different kind of yellow squash from a neighbor. Is different change every now and then. Slice up your squash. In a little butter saute a some chopped onion. Cook till getting tender. Add squash. When almost done add a can of drained, whole kernel corn and grated cheddar cheese. Heat through till cheese starts to melt. Add salt and pepper as desired when cooking the squash. I cook this in a pot rather than a skillet....iron is my choice of skillet....because you want the deep pot. Is good. But fried is my favorite. ❤️

    My mom made fried squash all the time in the summer. My parents had a big garden and we always had plenty of fresh vegetables. I fry the squash slices individually just as my mom did. And as you said to do: only turn them once. The browner the slices the sweeter the taste. Thank you for sharing this recipe. My parents were from WV and your videos remind me so much of the sayings and recipes from my childhood.

    I spent a week at John C. Campbell when my fifth grade class went there on a field trip twenty years ago. I think about that experience all the time.
    We ate fried squash every week growing up. My Mimi and momma made it in a cast iron skillet, but they scrambled it with onions.

    We had it both ways growing up - fried like yours and also steamed/scrambled with onions in bacon grease. So good! I agree with the light cornmeal coating, too. It's just enough to make a crispy outside while not overwhelming the delicate squash with a whole big wad of batter. I do my fried okra that way as well.

    We’ve been enjoying our squash from the garden!! Sooooo good. I laughed and told my kids and grandkids that the other night I about foundered on em!! The grands had to know what foundered meant so I told them about watching your Celebrating Appalachia. Oh….when we’re not starvin I cook them individual, but if it’s been a long day and supper’s late, scrambled till crispy brown and yummy!

    Now you've done it! This is a topic I have to comment on. Fried (or "fried") squash is one of my absolute, all-time favorite foods. My mom's recipe was different, it was chopped into coins, a little onion was added, and it was scramble fried in a little bacon grease,....maybe a very little bit of water, cooked until the water and squash liquid cooked off. Besides the bacon grease, use salt and plenty of black pepper. I can taste this just talking about it, and I have to say that most of my favorite foods involve the iron skillet, bacon grease, and pepper. After this and your fried cornbread story, I'm gonna need bigger pants. Thank you for it all.

    The best way I fry my squash, I actually mix up my corm bread mix like you were going to fry it. Then cut up a small yellow squash, a small zucchini a small onion, and a small green tomato. Then just fry them into cakes. The ingredients are steamed perfectly when the corn bread is done. We call it squash bread. It so good with your fresh green beans, tomatoes and cucumbers.

    Breaded fried squash and breaded fried green tomatoes early in the season, battered fried onion rings and battered fried pepper rings with centers and seeds included (my absolute favorite!) later in the season. Of course, batter fried mushrooms whenever.

    My daughter and I shared a platter of zucchini fried in lightly breaded coin shapes in the very same way - but at a sidewalk bistro in the Plaka in Athens, at the base of the Acropolis.
    The squash was so light, with a little crunch. I had a white wine and my daughter enjoyed an icy Greek beer while we listened to bouzouki musicians and cleaned the platter.
    So interesting that virtually the same recipe is popular there. But I never saw yellow squash at the street markets in Greece.

    My mom would bread all the squash at once and put them in an iron skillet with a chopped onion and then put them in the oven and bake them. She would stir them with a spatula every 15 or 20 minutes until they were done. Best squash I have ever had!!!!!!!

    Well,, its funny you posted this Tipper, because I am having squash tomorrow. I'll either fry it the way you did or just fry it in a little oil with some seasonings. It truly is hard to mess up squash any way you cook it. What I've found is this,, if you have little ones around the squash tends to disappear off the rack before it's all done! :) Same with fried eggplant. It's just so good when its hot and crunchy. Steamed squash ( yellow and zucchini) and onions with cheese melted on it is amazing as well! Thanks for sharing.

    We love fried squash and make it fairly often. I cook it like you did. Also, I will sometimes slice it up thin and sauté it with slices onions in butter and garlic. So good!

    Grew up eating squash in Virginia. I moved to coastal NC in my 20s and 30s. There I was taught to fry my squash in bacon drippings. No breading. Add onions when frying and then add the fried bacon crumbled on top when serving. I’d say that is my favorite way. Probably not the healthiest but it sure is tasty!!

    My grandma was Italian so we grew up frying zucchini the same way, but with olive oil. The cornmeal coating was a little thicker, with an egg wash. She'd use a giant square electric skillet that seemed to me to be made out of an old Ford's quarter panel. XD Could have been; we did live in Detroit. She would spend all morning making several pounds (there were usually about 7-9 of us living there at once) and it was what I called a "kitchen snack" - something you'd take one or two of every time you passed the kitchen. I remember this enormous stoneware cake pedestal she'd just load up with stacks of rounds higher than a layer cake. Funnily enough it was never used for a cake. It was just too damn big.

    Oh yes 👍 we had lots of squash growing up here in the deep south, fried, sautéed with onions, in salads, scrambled with egg and melted cheddar 😋 and squash casserole. So sweet and tender. Thank you Tipper. Do you remember Chief Henry?

    I can't even begin to tell you how many pans of squash rounds I've cooked in a skillet just like yours. The only difference is most of the time I don't take the time to flour them. I just put them in the pan and sprinkled a little bit of salt on them. When the crispiness is right on the bottom side I turn them over individually to fry them on the top side. It definitely takes forever, but I think squash is delicious and so worth the time; whether you fry them naked (so to speak) or give them a coating of flour. I do believe however; that I'll take a hint from you and Pap and slice them the long way to see if we like them just as well. Thank you Tipper, the squash looks look scrumptious 🙂

    My dad was the one that made fried squash in the house. Some times he deep fried sometimes he pan fried . I always liked mine darker and crispy so he cut mine thinner.

    Eastern North Carolina.......my mother-in-law sliced the squash the long way like your Pap. Then she used a thin coating of cornmeal with a little flour too. My mother never fried it....she always made what was called stew-fried squash and onions. She boiled the squash and onions, drained them, and then fried with a little bacon grease.
    Either way....good eats!!! I like to fry the individual slices.....and also like to sauté the squash and onions with a little butter.

    I love your channel. I grew up with mom cooking squash fried or stewed with onions. 43 years ago I fried my husband his first squash and it has become his favorite way to eat it. We both look forward to our first couple of squash out of the garden every year so we can have fried squash for supper. Sadly here in south Alabama our squash has stopped producing. Not sure if we will get any more this year, but will look forward to them again next year.

    Yes I grew up with fried squash and still love it to this day. I have had it both ways as well as squash casserole. Enjoy all fresh garden food, at 74, I find that it is the Best. Blessings to you and your family from Alabama.

    My grandmother used the stir method but she didn't finish it in the oven. She would flip them with a spatula when they were ready. I think that she only used cornmeal too. Particularly during the depression they had more cornmeal because they grew corn (field corn) for meal and didn't raise wheat.
    When I was in college she would make pie pans of it to freeze for me to have at school.

    Have you ever heard of or fixed I have heard it called refrigerator pickles using cucumbers?they are so good. And my aunt used to fix pumpkin bread. And homemade candy alot at Christmas. She is past now but I remember that each year we would get a pumpkin bread for Christmas. And grandmother used to always make me a homemade pumpkin pie for Thanksgiving I had a grandmother that at Christmas time she wanted to give everyone a little gift no matter how little it cost it was special because she wanted you to have it she had a lot of grandkids. I remember going out into the woods to get her and Christmas tree it didn't have to be special just an old pine tree .she would decorate it with those big colored lights and you could see it in the window from the road. I want to thank you for sharing your videos in this day of negative things its nice to see things like this that brings back memories of people and things that we love God bless you and your family

    My son cut thin squash and fried them crispy. My wife made something she called squash fritters.
    Both where very good.

    I just made this recipe tonight and this is so good. I wished I had a mess of turnip greens to go with it.
    My mom used to do this with what I call pie squash - I’d forgotten how much I liked fried squash. 🥰
