I love mini peppers! I saved the seeds and planted them, people said they wouldn’t produce, I have more peppers than you can imagine from 4 plants in a pot! I love them! And basically I got them for free!

Dearest Rachel, you should be on tv with your own cooking show. You make cooking so easy and simple to understand. To tell you honestly there were times I just threw together whatever I had in the kitchen and called it dinner and I can’t begin to tell you how my husband would not eat it because he would tell me I had put hate in it and you could taste it. But all I made was what I knew how and what I grew up eating which was very simple. One day I scrolling here and found you and now I can honestly say I enjoy cooking your recipes and now showed my daughter your channel and she also enjoys it too. Thank you for being my lifesaver. After all these years I find that cooking with love does taste better. Again Thank you so much. God Bless You Always ❤

What is it with you? YOU NEVER DISAPPOINT 🎉. I had never heard of Huevos Encobijados and now I can’t wait til morning to make them, lol 😂😂😂. The way you cut open the tortilla after it fluffs up is the way my mama made her gorditas, they were thicker of course. She’d spread a good dose of butter inside and then stuff them with beans, queso ranchero and a salsa that was divine. Thanks for being so good at what you do 💐

She was like everyone's grandma. Her name was Inez. I met a wonderful lady that day. My mother told me later, Inez came to the U.S. when she couldn't read or write. She raised all of her family here. Such a sweet lady.

Rachel, I'm going to try this. My aunt lived in new Mexico. Her husband made the best chili. He taught her so many great dishes. I learned what I could. I miss both of them so much. When I found your channel, I whooped with joy. I follow your directions. I love every video you put out. You remind me so much of my aunt ava rilla. I'm now cooking these fabulous for my family. My husband and oldest boys age 19 and 18 have hearty appetites. Funny they don't gain weight. We have a small farm and we work hard. This is the food I love, I grew up on. The stuff in the box and freezer is fake. Fresh is best. I have adopted you as my aunt now. Your recipe for refried beans. I can't tell you how excited I was when you did that one. Perfection.👍💯❤️. I love eggs cooked in a tomato sauce! I have had one that is middle eastern called Shakshuka. It’s delicious! I’m definitely trying this one. I had a “friend “ who was Mexican and he made eggs fried on top of tortillas but in oil, not sauce. He spooned the oil over the eggs while they stayed on to of the tortilla. Served with salsa and beans of course 😉. I’m definitely going to try to make this for my Mexican son-in-law. Thank you ❤

I love eggs cooked in a tomato sauce! I have had one that is middle eastern called Shakshuka. It’s delicious!
I’m definitely trying this one. I had a “friend “ who was Mexican and he made eggs fried on top of tortillas but in oil, not sauce. He spooned the oil over the eggs while they stayed on to of the tortilla. Served with salsa and beans of course 😉. I’m definitely going to try to make this for my Mexican son-in-law. Thank you ❤

Dear Rachel-thank you kind teacher. Watching your videos has given me courage to try so many great recipes with the best ingredients. Step by step I’m making so many new things. Its made it hard though to go out for dinner. My husband will say, “That was okay, your food is so much better”. Im looking forward to making this recipe this weekend for a great brunch. Never would have thought i would be making my own sauces and tortillas.
