Here's something scary:
A friend of mine used to work at a big Chipotle restaurant in the States. One day when he was working, a man with sunglasses and a suit walked in and said he was a health inspector. All of his paperwork was in order, so the manager let him in to inspect the restaurant. My friend had been working there for years and he said this guy was new; a health inspector he'd never seen before. This new guy never took off his sunglasses and walked into the fridge/freezer without any supervision. He didn't think about it at the time, but my friend also said he spent hardly any time watching the workers, which is weird because a health inspector is _also_ supposed to make sure the employees aren't cutting corners. His visit only lasted about ten minutes, which is nothing. A typical health inspector will hover around and drive everybody crazy for at least 30 minutes, maybe 20 for a small establishment. Two days later, customers started calling the restaurant, claiming they had food poisoning and that they were _sure_ they got it from Chipotle. Some of the employees even got sick because they also ate the food.
