What vegetables are the best for school gardens?

  • For school gardens you need a vegetable that will reach maturity quickly. This will let them be harvested before the end of the school year (spring), or be planted and mature before the frost (fall). MSU Extension Horticulture Specialist Lelia Kelly recommends several kinds of vegetables that will be able to do this.

    depends on what latitude you're working in and what ground temperature and humidty. We had a cool but early spring north of the 50th. in Canada: I was pulling bok choy and spinach just before summer heat, then got the vines going, and another fall crop. each year is different. greens of course. Normally I wouldn't palntthe cabbage family early: too many bugs hit them. but not last year. Or you can plant winter garlic, bulbs, kale, raddichio and first thing in the spring, UP they come.

    Maybe something like asparagus pick in the spring and put to bed in the fall and would get them thinking of multiple year gardens.
