When the onions are soft & browned. Add the garlic, oregano & basil. Add to tomatoes & blitz.
Measurements below. IF kneading by hand I recommend to lower the hydration to help with headaches and potential balding.
Measurements: 75% hydration - Stand mixer
400g poolish;
10g yeast
10g sugar
200g water
200g flour
The rest;
850g water
1200g flour
15g salt
65% hydration - Hand knead
400g poolish;
10g yeast
10g sugar
200g water
200g flour
The rest;
710g water
1200g flour
15g salt
Method:
Make starter
Proof 1hr in warm location
Dissolve in water
Add wet to dry & knead 10mins
Rest 1 hr in fridge
Generously oil tray
Split in 2, roll in ball & place on tray
Rest 1 hr
Shape pizza dough in baking sheet
Generously sauce pizza
Cook 20 min at 200c oven fan bake
Top pizza
Back in the oven for 20 mins
Red sauce;
2 can tomatoes
Sautee 1 onion
2tbs garlic
2tbs Oregano
1tbs Basil
Salt & pepper
