Lately I have been doing the lazy method, not sure if you ever seen it going around on IG, so basically you do everything like you are supposed to do as if you are about to bake a battard bread, take it out of the banneton, cut lengthwise so you end up with 2, then pinch the cut sides up and then do the same roll a bit and score and bake
The crumb really did look similar on all of them! I'm sure it would look different if you handled one gently and the other one heavy-handedly. But overall, they were the same.

sometime my dough are too wet is hard to shape.
Mine are a disaster 😢 and for some reason they stay pale, don't rise and are rock hard.
