    I make dandelion, violet and daylilly jelly every year, my kids love helping pick the flowers. When making the violet jelly they love watching the color change when we add the lemon juice.

    Valerian is a European plant naturalized in the United States that has gorgeous tiny pink blooms.
    Its use goes back as far as Galen and Plato.
    The entire plant is edible, its roots known especially for its calming almost sedating quality, often encapsulated and marketed as a sleep aid, but it’s much much more.
    The flowers have a slightly sweeter taste, but are still musky like the root.
    They make excellent tea, tincture, infusion for calming qualities and oil infusions.
    You can also just grab a small cluster of flowers and chew them, which was my first experience with the herb.
    Even though I spat it out after a moment of chewing, it had its effect on me, calming my nerves wonderfully.
    It’s also good at soothing anger or mellowing out bad moods.
    Animals love the plant, and often cats will climb to get to a bouquet of valerian flowers.
