But compared to all the ships and structures out there underwater and floating, these cages won't touch %0.01 of that. If this became popular people would be cleaning their coastlines to make space for their cellars. The best bottle of wine I ever had was a highly rated white burgundy, taste was incredibly like grape nectar, fresh and strong. So, I’ll have to disagree with you in that case. Does my inexpensive aged Spanish red wine taste much different than top French wine after the first glass, probably not.

If I owned a vineyard I suppose I would have enough property to build a big enough pond within; perhaps buy land with a river and construct holes with cement walls where the water passes by. That would also solve the government meddling over "the effect the process could have on wildlife" 🙄 . Wouldn't it be nice they payed as much attention over the actual garbage that is going into the ocean suffocating marine life.

You have that incorrect. Wine DOES age in the bottle until the cork is popped. Spirits do not age in the bottle, only in the barrel.
