Wow. Just stumbled on this video in May 2020 in the middle of a global pandemic. I grew up in the restaurant business from about 8 to 28. Worked with my parents, Nonno's and Nonna's and Zia's. Here in Brazil calabrese sausage is very popular, in fact almost no pizzeria offers pepperoni topping! If I moved to another country calabrese pizza is one of the things I would miss.
I bet that is incredible! I love sausage ! Fennel!!! For sure ! I make mine quite similar! From pigs we raise , slaughter , butcher and process ourselves! Right here on the homestead! Good stuff man! Make more videos

Here in Brazil calabrese sausage is very popular, in fact almost no pizzeria offers pepperoni topping!
If I moved to another country calabrese pizza is one of the things I would miss.
