I just purchased a package of beef neckbones. I love their flavor, Never thought of roasting them first. Last time I made soup, I tenderized mine by boiling them in seasoned water with Webers Roasted Garllic & Herbs, 2 bay leaves, marjoram, a tablespoon of Better than Boullion beef base, and italian seasoning for an hour or so before adding my veggies. I am going to try your way for a change. I use the same vegetables (without the pepper!), plus a sweet potato which adds more sweetness. I love soups, so I know this will be delicious. Thanks!
I made my version of this yesterday because it was that kind of day yesterday in NY. Now, it is coming down outside right now, and the rain will continue through tomorrow. 😊
I am from Florida and my grandma use to make neck bones in gravy and potatoes, bbq neck bones and neck bone soup . As adult I rarely see neck bones in grocery stores. Looks delicious 😋.
I used to only cook neckbones, either beef or pork, with black eyed peas. I always loved the flavor of beef neckbones and made soup with them over a month ago. I am going to roast them like Chris suggests next time.
Our family just purchased half a grass fed cow from a local farm, and it came with neck bones. This is the first recipe I found, and I'm sooo excited to try it out.
The Collagen Chris so important for the body and calcium from marrow and bone, mmmm, mmm oh so good for the older people, and young growth plus ooo the skin of women and men. The roasting of those bones, I wish more people I know would listen to this! Better for the flavor and richness. Roasting bones of chicken and beef is like smoked to ham shanks and and hocks, I always say to people and I ask would you make a pot of beans with un-smoked or raw pork bones? Hmm I say. Well then why would you add bones to broth that weren't roasted? 😆
For years I've been telling people to roast or at least brown the meat before adding to the soup. I get mad when I see people just throw the raw meat in the soup. It still taste great but the flavor better with roasting.
Morning Uncle Chris, it's a rainy day in NY, so it's a perfect day for soup. Thanks for sharing.

How do you use marjoram. I have some but don’t really know what to season with it
