Of you overfeed (more than the fry can eat in a day), then there is a risk that the food will decompose. If I put food in that is not all eaten in a day, I remove it and feed less the next day. The disc feeders also slow the dissolving process.

Depends upon the type of cichlids. I like Soilent Green for fry that need some plant matter, and Meat Pie for those that do not. Based upon your screen name, I assume you are into rift lake cichlids. Solient Green is designed with Malawi Mbuna in mind.
Beef heart mixture... I do not see why not. You would need to experiment a bit. I would try the Meat Pie formula on its own without the beef heart first, and if you feel you need even more protein add in the beef heart.
