Everyone who is going to try this recipe: be mindful of the amount of jalepenos or serrano peppers that you use! I am Mexican and can overall handle spicy foods. Everytime I try one of Claudia's recipes I have to use half of 1 de-seeded jalepeno and its spicy enough. I am not sure if there is a difference in where they are grown/bought but just keep in mind the spice levels of chiles are different!
Looks amazing. I plan to make enchiladas for the first time. My buddy gave me one he made at work and it was amazing but he used a lot of store bought stuff. I’m giving this a try bc I like to incorporate fresh ingredients. Can’t wait to give it a go. Thanks for the recipe!
I’m Mexican and you are 100% correct. I love jalapeño slices on my slice of pizza and I think I put about 6-9 pieces, enoug to cover the pizza slice and it’s not too hot for me. 😂😂😂😂

Now I know that Ms. Cluadia knows what she's doing. This is exactly how "Enchiladas en Salsa Verde" should be prepared. I prefer using "Monterrey Jack" for the enchiladas, and queso fresco for my refried beans. Either way, this is perfect!
