Honestly, gloom (鬱) might be my single favorite character in all of japanese. It's such a bold and distinctive shape. I don't think there's anything even SLIGHTLY similar to it in all of the joyo kanji. It's one of maybe a dozen kanji I can write completely from memory, and even though my stroke order is nonsense, I can be confident that a reader would recognize it. The kanji that really bust my balls are usually ones with really common elements that are similar to one another, and it's worse again if the meanings feel somewhat related. Recently for example, I had some real trouble in my review deck with rope (綱) and netting (網). I also have a tough time keeping some similar radicals straight, such as inserted between (夹), even (平), and half (半).
I was thinking about this topic when my friend jokingly showed me the kanji for たいと. When he told me it was the first he found when looking for hard kanji, I thought it was silly for the same reason you gave. Neat video!
My mom started teaching me kanji before I even went to kindergarten, and I started writing them about as early as I went to school. 鬱 is definitely one of the least intuitive kanji I have ever seen. The other two examples weren't too nasty (notably for having fewer strokes) but this one is an effing covid-19. It combines smaller pieces rarely if ever found in other kanji in a configuration that follows almost none of the logic we intuit from other highly used kanji. It's like a recipe full of ingredients you can't find in any grocery stores you or any of your friends know about, prepared and combined using mostly techniques you never use. That's how you make 鬱

I quite like 幽霊 (yuurei; ghost) because it looks quite ghostly and ominous. Analogous to its meaning! :)
I love the simplicity of 本 (Book; "moto"), simple and pleasant to write.

To me, the most difficult Kanji is 生!Why would I say that? The Han reading and Kun reading for it is insane. It changes sound whenever it feels like.
