Thanks for the Video. I had to untick Auto Reboot in the options tab within odin because the tablet kept on rebooting in to the stock recovery instead of TWRP. After flashing with odin, I pressed power + vol up and released power once the samsung logo was displayed and kept on pressing vol up until the tablet showed the TWRP logo. I then followed the rest of the steps in the video.

Worked great for me - however, I had to make sure that immediately after TWRP finished flashing, I would immediately unplug the cable, then would hold PWR + Volume up. I would do this until the tablet force restarted, then once it showed the boot logo for the second time I could let go of the power button and it would enter TWRP. If I did not do this the tablet would just boot to its stock recovery.
I managed to complete the update from 4.1.2 to android 6, but I notice a slowdown of all the apps. I ask you how can I bring it back to its original conditions, I state that I did not make a backup before updating it. I was planning to install android 4.2.2 on GT-P3110 they say better than 4.1.2 Can anyone tell me how to install 4.2.2 and where to download it?

I think your custom recovery also will works and you can copy the files to the SD Card or to the internal memory of your tablet
