So enjoy your videos, Anja! My daughter lives in Germany (I live way too far away from her in Colorado🙁) and learning more about German cooking and culture helps me to feel more connected to her and to our very strong Germany heritage. It's the highlight of my year when I travel to Deutschland to visit her and soak in the German culture.
Hi from South Africa ❤ Thanks for this video My mom always popped her dumplings in a soup or stew , this way the dumplings always had a great flavour and juicy. Pressure cooking also makes everything so much faster. Keep well and God bless
I love potato dumplings and it was my father's favorite dish. The second recipe is close to ours and Mom always added a little nutmeg. We drizzled burnt butter on the dumpling at dinner. Leftovers were sliced about 3/8 inch think and fried in butter. Thank you for the recipe
That all sounds delicious and nutmeg is a great addition to the dumplings! I am glad you enjoyed this video and thank you so much for your nice comment 😊 ~ Anja
Potato Dumpling or Potato Balls as we called them look delicious. My Mom made with raw potatoes, and I grated them (I scraped my knuckles all the time). They were so much work, I never attempted to make. However, yours looks much less time consuming and just easier. I will give these a try. Every Christmas she made roast, potato dumplings and real home made gravy. She passed in 2014 and I have not had one potato dumpling since then. You bring back many precious memories with these scrumptious recipes. Thanks you again. May you have a very Blessed Christmas.
I guess in Swabia we did a mixture of both recipes: my mother always incorporated the 'crusty' fried bread bits and the bit softened fried onions into the potato dough: folded over & enclosed and simmered them like that in saltwater.: then served with sauerkraut und Kassler Ham: meaning a chunk of a bit smoked ham cooked & stewed with the sauerkraut..
@OurGabledHome But the 《 Dampfnudeln》 : I think are more rheinisch : risen and "geschmort" in a pan: we had them always risen 6-8 in a big oven glass-casserole and added sweetened milk around them to soft & fluffy rise them : the tops were basted with the sugary milk and got crusty & a bit caramelised! Mmh with Apfelmus or any other Compote
Thank you so much... I'm going to try to make some tonight! I would love to see a sourdough recipe as well, would be great for when I end up with too much sourdough to make bread. 😍
Nice! Happy cooking tonight! And yes, I will work on a sourdough steamed dumpling recipe. Did you know that I have a chicken and sourdough dumpling recipe: ourgabledhome.com/chicken-and-sourdough-dumplings/ 😊
Hallo Anja, danke fuer das Video. Just to mention, the famous Thueringer Kloesse are made with grated raw potatoes squeezed in a cloth to remove the liquid, many add some cooked mashed potato too, and potato starch that is often saved from the squeezed liquid. Croutons are added, if desired, and then they are simmered for about 20 minutes. No egg is added.
My stepmom made them with a potato dough, left the pits inside, and sauteed dry semmel crumbs in butter and a bit of powdered sugar which was sprinkled over the knoedel. Vielen dank!
Lieben Dank für dieses Video. Can you please show us, or give a link to "rohe Klöße". My Mom (RIP) made this for my hubby when we still lived in Germany. DANKESCHÖN 😊
L❤VE dumplings! My 2 favorite are Zwetchgen Knödel and Semmelknödel! The plum ones unfortunately are a labor of love and quite time consuming 😵💫. Yours look delicious! I’ve found that if you roll the semmelknödel in flou after you form them and pack it in a bit, that they hold their shape much better.
Hi Anja, Have you made potato dumplings with a few toasted croutons embedded in the center before cooking? The toasted croutins may, or may not, be seasoned while they are being toasted.
My grandma used to make plum dumplings...they were rolled in melted butter and then brown sugar I think..they were fantastic and the plum in the middle was sour..such a contrast. She was from Austria Do you make them?...Sue from Arizona
My mom always made Hefeklösse , after making the dough, she would boil the Klösse and they are served with a blueberry or cherry sauce , that was lunch for us and of cause we loved it , unfortunately I don't have the recipe .
I am looking for a yeast dumpling that my mother boiled, got pillow soft. We pulled them into bites with 2 forks, drizzled with melted butter, sprinkled with sugar. Ate with a mixture of applesauce and fruit cocktail. I want some so bad
My Oma made bread dumplings but they were filled with onions and bacon. Can you show how those are made? She also made a kind of like coleslaw that had a vinegar dressing... I cannot remember how she made it. She was from Salzburg Austria. I would love to have those 2 recipes!
Nice! If you want to add a filling you just poke a hole in the middle, add the sauteed onions and bacon, and close the hole again. Every region has their own flavor and recipes ☺ ~ Anja
My mom made chicken and dumplings. She would roll her dough out thin and drop them in the chicken mixture. They were thin and chewy.Have you ever heard of that? I though they were delicious.
My family always made dampfnudeln by steaming them over boiling water (in a dish towel suspended on top of the pot). They had plums inside and were eaten with vanilla sauce. Sadly my mother has Alzheimers so I can’t ask her how they were made. If you know this version perhaps you could do a video.
I’ve been waiting for you to do a video like this ☺️
Aww ... thank you so much for your patience and your sweet comment 😊 ~ Anja

I love stew with dumplings, it was my favourite when my mom made it. Yes, she used a pressure cooker.
I love potato dumplings and it was my father's favorite dish. The second recipe is close to ours and Mom always added a little nutmeg. We drizzled burnt butter on the dumpling at dinner. Leftovers were sliced about 3/8 inch think and fried in butter.

Hi all 3 types of dumplings looked great, I’ve never heard of the 3rd steamed version. I bet all 3 tastes fabulous, thank you for sharing 😊
Dampfnudeln! I have a pot that my Oma used, we'd always listen for the sound of the water boiling out? And they were so yummy.
Yes, that sound! Very distinct. Love that this video brought back memories of your Oma 💛 ~ Anja

The potato dumplings remind me of the very Swedish kroppkaka. But without the classic filling. ☺️
Nice! I'll have to check those out 😊 ~ Anja

How about liver dumplings? I had a friend/neighbor that made them. Yummy.
Those are great and I thought of featuring them in a separate video 😊 ~ Anja
Would appreciate a Leberknoedel recipe!❤
Hi Anja, Have you made potato dumplings with a few toasted croutons embedded in the center before cooking? The toasted croutins may, or may not, be seasoned while they are being toasted.
Yes, my late MIL always made that and it’s great 😊
@OurGabledHome Gaaanz genau 👍
How about Marillenknödel...please :)
I'v e never done anything like this. may try sometime. I only do chicken and dumplings.:)
Love chicken and dumplings! Hope you'll give these other dumplings a try ☺ ~ Anja
My grandma used to make plum dumplings...they were rolled in melted butter and then brown sugar I think..they were fantastic and the plum in the middle was sour..such a contrast. She was from Austria Do you make them?...Sue from Arizona

I’d like to try potato dumplings but I can’t find potato starch. Is it ok to substitute it with corn starch?
Thank you ❤
I think so!

Sure, that sounds delicious 😋
how about hefe kloesse with melted butter and cooked obst
Yes, those would basically be like my Dampfnudeln but so yummy 😋 ~ Anja
My mom made chicken and dumplings. She would roll her dough out thin and drop them in the chicken mixture. They were thin and chewy.Have you ever heard of that? I though they were delicious.
I think those are called Flädle. Do an online search and let me know if that is what she used to make 😊 ~ Anja
@@OurGabledHome they look similar, short flat strips. Dad was stationed in Germany for 3 years, Mom had German friends. Could be her take on it.

❤❤❤❤❤❤
Thank you 💛 ~ Anja
Hi from germany👋😄 Dumplings are only eaten in southern Germany not in whole Germany😂
What are you talking about lol. We eat them in the northern Germany too. They are eaten all over Germany but originated from the southern part
Thueringer Kloesse (Thuringian potato dumplings) are eaten in Thuringia, the heart of Germany, so in the middle.
The bread dumplings needed one or two tablespoons of flour, to prevent them from falling apart like yours
Thank you! It was only really one that didn't stick but thanks for the tip 😊 ~ Anja
My wife and I have made those potato dumplings for 68 years and only now I find out why they sometimes fell apart. I'll try again at Christmas.
Two things to keep them from falling apart: making sure the dough is sticky enough and not using boiling water. Happy cooking 🥘 ~ Anja
