I love bonito, but my family and I are used to it being completely boneless, Japanese style. The Japanese video on how to prepare bonito chopped of the breast bones, which on a small fish means chopping off the breast (the bit that houses the innards) and also, some of the meat near the back bone, extending laterally (? horizontally) towards the skin, leaving four triangles shaped sticks (like Toblerone) of boneless meat, I think. This means that the bonito that I bought today, which are about the same size as the one you have there, ended up pretty small. No wonder they were so cheap.

G'day Scotty, I like eating bonnies too, either cooked or raw, but correct me if I'm wrong. I thought the law was that you aren't allowed to fillet while on the water? Just something I heard once and not 100% sure if correct. Just wouldn't want anyone to get busted if that was the case. Cheers.
I think on charter vessel we are allowed but will look into that thanks.
