2巡目です。少し慣れてきたようです。
質問ですがan omamoriと冠詞が付くのにokonomiyakiにaが付かないのは何故でしょうか？
Great question!😃 英語ではOkonomiyakiに特別な決まりはないのですが、 cakeや pizzaと同じように、切って食べるものなので、数えられない名詞として扱いました。

aとtheの違いはテキストにありましたが、数えられるかどうかはそのように考えればいいのですね。納得です。

お好み焼きは粉ものからできている為、数えられない名詞となり、anをつけていないということですよね！
数えられない名詞でも複数形のTheseでなく単数のThisでいいということでしょうか？
お好み焼きがいっぱいあるわけではなく、
数えられないけど一つのお好み焼きを指しているからThisで良いということなのでしょうか。
初歩的ながらよく考えると気になってしまいました。
失礼しました。私の説明が悪かったかもしれません。
物によりますが、お好み焼きのような「外来語」は英語では「s」をつけないことがよくあります。しかし、sを付けないからといって「数えられない名詞」になるとは限りません。お好み焼きはピザやパンケーキと同じように、一枚一枚を数えられるからなのか、「数えられる名詞」のカテゴリーに入ります。
ですので、複数ある場合、「These」や「They」、または、Be動詞の「Are」を使います。
→ These okonomiyaki are really good! のように。
一枚でしたら、
→ This okonomiyaki is really good!
外来語は難しいですね〜 例えば、「寿司」Sushi、は「Rice」と同じ扱いのためか、「数えられない名詞」です。
複数のにぎり寿司があっても、
→ This sushi is really good. と言います。
