I believe the are doing La Jota Vieja, a traditional Spanish dance. That's my GF playing the violin in this scene and his group used to perform that song. Rudy and Martha Bannwart-Austin are doing a tamed-down version of the dance.

She died not long after this movie. Had a ruptured appendix that morphed into peritonitis. In those days IF they had penicillin and Sulphur drugs ( for bacteria and fungal infection ) both would likely have lived. Yes! they WOULD have. Sad!
No it's not Beatrice Dominquez either, she was the dancer in the earlier Valentino movie, The Four Horsemen of the Apocalypse. She died shortly after that movie. I'm still trying to find out who this lady is, although she looks a lot like Beatrice.
