Perhaps shawarma (as used outside of the middle east) really refers more to presentation than to meat preparation. I think the word shawarma (as use in the United States) refers to Doner meat rolled up into flat bread (as demonstrated in your video starting 28:18) or put into French style bread as a sandwich. Imagine a different name for all 5 of your meal presentations. I think, effectively, outside of Turkey, this may be what is done, even though the meat portion of each different presentations is exactly the same. Blessings on you and your family.
