  • Chinese Handmade Egg Noodles (Chinese Recipe) The Easy Way
    Welcome to Xiao's Kitchen. My name is Xiao Wei and my goal is to make your cooking simple and exciting. Ever since my Mother showed me how to cook at an early age, I have always had a strong passion for cooking. My family still live in Inner Mongolia, in the northern part of China, where I visit each year and learn new Chinese recipes.
    Ingredients:
    500g Plain Flour
    4 Eggs
    30ml water
    Pinch of Salt
    Method:
    1. Add all ingredients to a large mixing bowl, then combine ingredients together
    2. Transfer the mixture onto a work surface and then knead for 5 minutes to form a smooth dough
    3. Then cover the dough and leave to rest for 30 minutes
    4. Uncover the dough, fold and knead for 5 minutes
    5. Cover and leave the dough to rest for another 20 minutes
    6. Repeat last 2 steps again once more
    7. Dust a work surface, take half of the dough and place onto the work surface, leave the other half covered to avoid drying out
    8. Using a rolling pin, roll out the dough into a thin sheet of about 2mm in thickness
    9. Dust the work surface and the dough during this to avoid sticking
    10.Fold and roll from one end of the sheet to the middle, then do the same to the opposite end until they meet
    11.Cut the rolled up sheet into thin threads or to the thickness of your preference
    12.Lift and shake, place onto work surface or board, dust with flour and shake to avoid sticking together, leave to dry a little for 30 minutes
    13.Repeat this with the other half of the dough
    14.You can cook the noodles from fresh, or divide into 6 to 8 equal amounts and place into food bags, you can store the noodles in a freezer for a maximum of 4 weeks

    After you freeze the noodles, can you boil it right away from frozen or do you need to thaw it first ?

    So after taking outof freezer i should defrost or let it thaw or directly but in boiling water

      Even if you dust it with flour it will not keep for very long...it will get damp & stick together..you should use it straight away......or...you can do this & it will be Okey for months: th-cam.com/video/D0P-lkphNc4/w-d-xo.html

      We're using these noodles tonight which we have stored in a sealed bag bin a cool dry place for over 4 months....they will keep for a long time using this method.....hope that's helped you Jesse

      sishrac - 100g Tipo 00 flour, 1 medium egg and a pinch of salt. Make the dough, fridge it covered for 30 minutes and then run it through a pasta machine. ADD TP boiling Water for 2 minus pr indtil the noodles float. (Add a little flour once the noodles have been cut prior to boiling to stop them sticking). Its dead Easy. The vol7me made here is for like 5 or 6 people 👍

      I find one medium egg per 100g Tipo 00 flour and a tablespoon or water (if any) per person does the trick. Rest the dough covered for 30 mins in the fridge before rolling and cutting and a pasta machine is really handy 👍

    Really good exercise for arms, next make noodles with feet, now you have a whole new body exercise
    and have noodles at the end.

      Rice noodles are made with different ingredients completely and are cooked using a different method.
