That is a Teochew cake which is pink in colour and it is called "ang to guê" red peach cake - 紅桃粿 or just "to guê 桃粿" peach cake and some people call it "bung guê 飯粿" rice cake. If you can read Chinese, there are lots of recipes in the Internet.

If you use only uncooked dough, the cake will be much less elastic.
