We were told the same about washing our potatoes. But here in zone 3 we cannot wash our veggies outside in the winter either and I do not want to wash them inside and have the dirt go into our septic system. So for the past ten years we have been washing our potatoes, carrots and beets. However they must be dry before storing them in the root cellar.
I don't really like beets unless they are pickled/sweet or if they are baked then chopped and in a green salad. I oil them, salt, wrap in foil and peel when they cool. So delicious that way. I was shocked Chelsea, that you feed those greens to your pigs, gasp lol. In the southern US, we fry up some bacon and onion throw in the greens to wilt then barely cover with water and cook until tender. They are my favorite greens. I have root cellar envy so thanks for sharing. It's still in the high 90's faherenheit during the day and high 70's at night here so it was nice to get a glimpse of fall, the shots of your property with the mist was so pretty. Happy fall y'all!
My grandma would make " pickled beets" for us kids. Cooked beets, vinegar,water and sugar. That is still my favorite way to east them. Everything looks wonderful! Love,love!
Great harvest and root cellar. I am in So. CALIFORNIA. I let my beets go to seed two years ago. I did not plant a veggie garden last year. This year after all the rain, I have beets from blown seeds in the yard from two years ago. I have a lot of berts!!! I wish I had a root cellar.
OH MY the beets. My favorite. I love to juice them with apples or pickle them. There are always beets of some sort in my home...and sauteed beet greens YUM
It is so exciting to get foods ready for the winter months. As for beets, try pureed beets in chocolate cake. That's how my daughter got beets into their girls. I love beets too. I cook the greens and roots in lightly salty water and serve as a hot or cold salad with fresh crushed garlic, S/P, olive oil and red wine vinegar. It’s delicious! Great companion to fish or chicken.
My husband made a deep window well into my “root cellar.” He covers the outside of the window well with a fitted piece of wood. When I want potatoes, onions, or winter squash, I open the cellar window from inside the house. It keeps the potatoes good until they are all gone - usually the end of April!

Nice produce. We had a root cellar on my dad's farm in Alberta, Canada. I do love beets very much. Borscht is my favorite soup. I also like pickled beets. Cheers!
Your garden so wonderful in this foggy day. And plants both cultural and wild very similar to my Russian suburb garden near Moscow. We are in zone 4a. Some years we have snow in the end of September. I don't love beet) The soup you mentioned we eat in kinder garden in Russia. The most awful thing in the world I believe.
You should try pickling the smaller beets, whole, in sweet vinegar. They're delicious, especially with a Ploughman's Salad or with oily fish like Mackrell.

Oh my gosh I love borscht too. My Nanny used to make it and I had just forgotten until you reminded me. I hope you are able to share your recipe in the future. I am now craving it with a big dollop of sour cream and fresh dill. The harvesting was beautiful on that foggy day made it very special I thought. Love your root cellar. Also very much love the cart. I’m not sure if it did or not, but it did small nice! Lol I don’t have a huge issue with rodents (lots of cats) but I like to try to make it as inhospitable as possible for them anyway.
Hi Chelsea: Looks like a great fall harvest. Do you still have tomatoes ripening on the vine in the high tunnel? Are you considering any heat to extend the season; like a hot compost pile with the manure from the cows. A 6'x6' pile in pallet walls might work to even extend the season a little longer. the old guy Bert

Really depends on the veggies you use. I’ve water bathed/pickles cukes, beans, cauliflower, peppers, carrots… hmmmm, I’m sure there’s more, but that’s all I can think of off the top of my head.

Beets are great when they are cooked, cold and cubed. Sprinkle some soft goat cheese over that and yummie! Great lunch salad !!

cooked beets, roasted sunflower seeds, garlic cloves, smoked sweet paprika, salt pepper, soy sauce and olive oil in a food processor. yummmm

Why didn’t canning your borscht work? Always works for me. You pressure canned it- right?
