I think this looks great! The one thing I thought you would do is actually have functional buttons so you would not have to pull the hood over your head. I really like the idea of this as a separate piece from the cloak, particularly with the idea of a cloak tarp/tent. You could set up the tarp in the rain while still having some limited protection.

Nice build! Medieval hoods (and most accessories) are severely underrated, I made one out of a light polar fleece throw and the difference that alone can do to protect from the change of temperature after the sun sets is impressive.
To answer the question of how I would do things differently: Honestly not much, mostly design/aesthetic changes, like straight lines for the edges on the mantle part (almost in the shape/style of the dragon shield armor of the Green Ranger from the original Power Rangers). I would also add an optional cape that could be worn under the hood that matches the style, but can detach for sunny days or to be used as a blanket.

I made my ranger hood out of an old army wool blanket. I used the Skjoldeham hood pattern, it's from around the Viking era and dead easy, only needs three pieces of fabric.
One thing you could have done with the unfinished edges on the mantle was get a yarn that matched the edging of stitch around the opening of the hood. Do what is called a blanket stitch around those edges, and it would tie the look together that way, and it still prevents the edges from becoming ragged over time
Fun fact: seamster and tailor are actually different jobs. Seamster would be correct in this case because you're making it from scratch. Tailors mostly do alterations, and work from patterns or precut pieces. Tailors used to be all male, but now it's considered a gender neutral term.
I love the billowy hood too, BUT it catches air and blows off your head super easy and doesn't keep you warm. A hood and Mantle is on my to make list, right after I make the Ruana cloak from a wool blanket. It occurs to me if you intend to wear a helmet under the hood, over sized a bit could be a good thing.
I have a garment with a hood that has a drawstring through it. I ran some wire through it to hold the shape, can still be tightened down with the drawstring but also will hold whatever shape I bend it into.

I'm wondering if you could heat form plastic corset boning with a heat-gun or something if you wanted you hood to maintain a more extreme shape? I'm imagining giving the front of the hood a fairly generous seam allowance, or doing the hood in two pieces with again a generous seam allowance, and then turning that into the boning channels. Obviously this would be more on the cosplay end of hood design where you wanted that opening shape to be much larger or where the hood was just too big front to back to maintain it's shape without just flopping down over your eyes.

I wonder if you could make a fantasy core waterproof wool blanket cloak version of great kilt spliced with the u.s. military woobie/poncho/hammock/shelter system. It would have layers that snap for extra insulation and could be used in so many ways, but would also look like something a fantasy ranger would wear.
If you need to clean with the leather on if you clean by hand, you can then clean the leather with Saddle Soap. You can find Saddle soap in any farming store, Tandy, or Weaver. Please don't use heat to dry just let it dry naturally because of the leather. Remember, leather gets a patina with use, so it will darken over time no matter what you do. I'm sure you know all this, but I'm just adding my two cents. Have an awesome day, sir.

The easiest hood to make is the skjøldehavn Viking hood, it just contains of one large square and two smaller squares, about half the size in dimension of the large one.
I might have swooped the leather on the top to the temples; same at the rear, but arced out another 2-3in. Possibly the shoulders as well. Would hold it open a little more and not interfere with vision and hearing as much: just thinkin from a Rangers point of view.
Question: is the leather chrome tanned? I wonder because I think it would be kinda neat to tool sigils and symbols into the leather. If understand it correctly, you can’t really tool chrome tanned leather…
The leather utilized was definitely a Chrome tan, but using a thinner Veg tan, (maybe a 3/4 oz or 4/5) you can do some cool things with it and then sew it on just the same! if it's a bit too stiff, just hit it with some neatsfoot oil (not too much) and it should become malleable to work with the fabric. (Apologies if I sound mansplainy, I don't know your leather experience and my job has me teaching this stuff all the time)

Another place you can get thoes nice wool blanket is army surplus store. The ones near me are 12 bucks for newer ones ww1 blankets are like 40 bucks. Heh but they are the same to be honest.
Important note, if you want to line it, you wanna make 2, but with one backwards as far as rightside and wrong side, (on one you want your "wrongside" to be down and on the other you want the wrongside to be up so the two wrongsides go together leaving the rightsides being the only thing visible!
A slightly better option for that type of hood would be to not sew the front together, use a button for it there and it's easier to put on and take off.

Cause I already own two woolen cloaks, a short one and a long one, which are amazing. But they are simply too warm to use in the summer.
You're workin' too hard with all that templating....... Start with a cheapass thrift store hoodie, the bigger and baggier the better. Simply trim away until you get the shape you want, then rip the seams, and you have your template to make a wool version. Or, just hem the raw edges, decorate / reinforce with leather or oilcloth, and be done with it.
look, i have a rather "unique" approach for cleaning anything: if it doesn't survive the washing machine (or the dishwasher for what matters) it doesn't belong with me. cant be bothered. so yeah, if i can't clean with a damp rag, it will go into the washing machine, and if it's something i made myself, well, i know how to do and fix it.

Me too, i made a few, even one as a Viking inspired Santa's hood and one that water resistant with siliconized cotton canvas Larp tent fabric.
What a great video and you had it right a male seamstress is a seamster. A tailor is different and is a unisex term.
I have been a seamstress for 20 years and can confirm: Sewing is definitely black magic.
Now you just need a great kilt to finish off your super versatile, waterproof wool outfit.

When I make this one, French or flat felled seams. It keeps the fabric flat where you want it and adds decorative top stitching. Top stitching good.

I would have temporarily baste stitch to hold everything together and take the pins out.

Yes! A basting stitch is so quick and falls more accurately than pins.
How about adding 2 buttons in place of epaulettes. Then add a cloak with two button holes at the top.

For the buttons, they may not be useless after all, since you could cut button holes in your cloak and use the hoods buttons to fasten it.

Add some locktite to the buttons you screwed on. They have a tendency to work their way loose without it

I may be wrong but I believe most cloaks had a separate hood. Specifically not a built in one to deal with really crappy weather.

You should get fabric clips so you don't stab yourself with pins. Plus they're a lot easier to use.

There was a much easier way to make a mantle hood, but it came out nice. Look up viking hood. Simple square construction.
