    Every steer has 13 ribs, but traditional short ribs come from ribs #5-8.

    Great video, After 20 years in the business it is still the hardest piece of rib to sell. I think the lack of meat is the largest factor in customers not buying. They are a tasty cut and excellent on the grill.

    Great video. When Korean immigrants came to L.A. in 60's and 70's, they saw their favorite beef Kalbi, but in flanken cuts, which they never saw in Korea because there were few slicing machines in Korea back then. So they named it L.A. Kalbi.
    You may see this name on the menu if you go to a Korean restaurant.

    Great video! I have a beautiful beef short rib from an incredible farm in our area that does only sustainably sourced grass fed beef. I had no idea how to cut this hunk of meat into manageable sizes. Now I do! Thanks!

    This was a wicked informational video. I am so use to seeing ribs presented in the skinnier back rib cut. We bought half of a cow and I opened this package of what I now know are english cut short ribs from the plate. I didnt know what the hell I was dealing with haha. So thannnnk youuuu!!

    the flanken cut is a famous plate in Argentina and South America known as "Asado de Tira". It's flavor is unique, the best meat I've eaten in my whole life

    As others have found, very well done! It clearly explains (and shows) exactly where the cuts are made and what they look like before and after. I had a tough time trying to visualize exactly how a rib eye and other cuts like a t-bone appear in a large side of cattle, now it's been found and can be identified even while it's still yet to be cut out... yay!! Will be preparing short ribs tomorrow with some new found knowledge.

    Never in my 60 years have I ever heard or in fact seen English cut ribs. Those are huge.. We don't have beef ribs, only pork ribs. Since seeing this before, I have been to 4 butchers and each one has laughed and more or less said the same thing. That the Americans have made it up. One butcher has been in the business of generations of butchers and the history of cutting beef to his knowledge of 100 years with his father , is that there is no commercial cut known as that. But still interesting to watch

    More grocers need to carry beef plate ribs for us smokers. I'm talking about 2:55, that hunk of 4 rib bones before you cut it into short ribs. How would I go about asking my grocery store to prepare this?

    That was awesome! If only all meat cutting videos were this well made and informative. I would literally pay you money if you made this into a series and did all the different cuts of beef and pork with this level of quality and detail. I've recently started in the meat cutting field and I'm trying to work my way up. Videos like this are IMMENSELY helpful. I'd love to be this knowledgeable about different cuts of meat one day.
