I think the chest is just a symbol of all the mysteries Rose had hidden away, and by the time each of these mysteries was revealed, the chest was open during the movie. Alternatively, it's just a background detail showing an example of what Steven was doing during the timeskip. Most likely it wasn't really relevant, so we didn't get to see what was in there. Btw, that also applies to the one of characters in Future. Bluebird and the Lapises had their role in there respective episode (showing that still not everyone is on Stevens side and both showing the charactergrowth of Lapis and that not all Gems adapt to era 3 easily). While it whould have been nice to see them again, they only got to have one appearance, because of the limited amount of episodes.
I've seen various ideas go around of what the heck could have been inside the chest. My favorite up until Future was the Jacket. But I really like the last two possibilities for the reasons you've provided. They make a whole heck of a lot of sense! I especially like the Journal idea because it makes so much sense for Rose/Pink to do that. Especially with what she mentioned about keeping things in a journal almost sounding like she has experience in doing just that: Keeping things in a Journal.
My theory is that it's pictures or recordings of good times with the other diamonds. We already saw a few in her room on Homeworld, and I think she would've wanted to have something sentimental (because family drama is weird; I can completely relate to her doing something like that). And it would make a nice parallel to Steven doing that with her portrait later.
The only BIG mystery in my head about Steven Universe that I felt was possibly unresolved was this. Since a few months passed after what happened in I Am My Monster, Steven says he's doing better with himself; i.e. working towards properly improving his behavior. While this is all well and good, there was ZERO indication on whether or not he still hated Rose/Pink. Throughout the near entirety of Future, he seemed to want nothing more to do with his mother and wanted to distance himself as much as possible. But by Future...there doesn't seem to be any sign of these feelings anymore. Has Steven come to accept that Rose/Pink is just as flawed as he is or does he still view her like an unholy monster like he did the Diamonds (despite their efforts to improve themselves and Homewolrd)

I think the chest might have contained some memento of her time on Homeworld. Of all the secrets she kept her identity as Pink Diamond seems to be the one she most wanted to stay hidden. So it would make sense for her to lock away any proof of who she was.

I didn't feel like shattering was retconned as technically when a gem is shattered they are dead but not fully as those pieces can still reform or possess an object (Frybo), it's just that before we never had all the pieces of the gem available till future with Jasper and then yellow basically doing a big puzzle.
Also for the jacket theory it has been two years he could have found it and been excited right after change your mind but after two years? Which is why he doesn’t pay attention to it
What if it's a journal by pink diamond of what she's done and who she was before earth. What they were like. Her wishes and hopes. What if it also contained a dire warning about herself like when Steven went inside pearl. Or what if it has the remains or dust of a previous child that didn't make it and Steven was the only one who did because that time rose gave up her form to make it work.
What if it’s pink diamonds shoes, Think about it rose might have found them embarrassing and She locked them up so she won’t see them ever again. Besides this might explain why rose is barefoot.
If Steven universe ever comes back It would be instresting for them to explore everyone's relationships after future and also including an arc based solely on rose so we can understand her past a bit more

uum... the pink jacket thing is wrong. in the episode of SU called "Steven's birthday" connie gives him a pink jacket as a gift. he morphs too look older and it doesn't fit and has to stay unbuttoned, but later in the episode he couldn't handle morphing so long and turned into a baby. then he came back to his normal 14 year old self and the jacket could be buttoned. in SUF the jacket is always unbuttoned, so it has to be the one connie gave him for his 14th birthday edit: or I'm wrong and this is a different jacket

My idea was at first the secret that she was pink diamond, i am no good thoery maker, but i think it would be logic, since she couldn't predict that they learn the secret by going into Pearl memory and that she had to tell them at a moment, thus why it wasn't revealed cause not improtant because they already know the truth. If this has flaws don't hesitate to tell them to me !
One thing that I'm not too sure on but think it could happen if they decide to is that the chest contains the shards pink diamond used to fake her death. We never see what happened with the fake shards and could be something rose might leave for Steven to find and figure out when he gets old enough to know
I don’t think that the shattered gems would be in the chest because in “secret team” pearl amethyst, and Steven pop a ROSE QUARTZ bubble with shattered gems in it, so why would she put those shattered gems in the chest? It’s more likely that she put her journal in it
