      Aw, honey thank you! You just made me smile ear to ear! I know I tend to ramble at times and many don't like it, yet many more do. I can't tell you how much you made my day! I apologize for a late response, in case you are unaware, I have health issues going on and that is also why there are sometimes gaps in between my videos at times. I was extremely close with my parents and grandmothers, I love impromptu sharing while cooking, little memories and such, sometimes just a tidbit that just pops into my head. Again, thank you, it truly made my day! :D

    Great video... I have a bunch of squash growing and my wife said I’m making them. So I’m trying this tomorrow. Love the story of the skillet... my father was in Korea also: I’m a veteran myself. My mother loves Okra.. so I’ll try to fry that too.

    I make my yellow squash different I wash my squash and my onions, I just made some squash today and it was so delicious I ate the whole pan I was supposed to be having yellow squash with onions, chicken breast fried and some other vegetable but I couldn't resist it the squash was just so delicious that I ate the whole pan! So basically what I do is wash the squash take the ends off both squash & onions, slice them up I use some margarine today put that in the pan let it melt some had a little tiny bit of water in the pan and then I added my onions and squash mixed together. I used some black pepper some seasoned salt, a tiny tiny bit of lemon pepper also some paprika, basil and a little bit of sazon oh and also I almost forget some sugar and I let them cook down til they're nice and tender but I like mine to where they have a bite where when you bite into them they're not soggy your teeth can kind of sink in but then they're still tender!!!! Absolutely Delicious 😋🍴🍽️

      I'd like to see how or even if you have a recipe for "fried okra gumbo".
      My mom used to make that with potatoes, tomatoes, onions, okra, yellow corn meal, salt ,and pepper.
      It was always better if it was a little bit on the charred side of things, especially the tomatoes, onions and potatoes, not so much on the okra though.

    Thank you! This saves a lot of time and mess for certain. My mama taught me to use cut up butter to fry it and you go through a whole stick of butter just waiting for 2 squash to be fried that way. So if you use an iron skillet what do you think the stove setting should be?

    Made this alongside Some sage, parsley, garlic and lime zest stuffed pork tenderloin and a Romaine, parsley, garlic, cucumber salad! Amazing flavor, Really good! Will DEFF make again!

    Oh jeez am I weird? I do salt onion gric pepper. Milk then flour and seasoning mix then fryer. Guess it depends on your taste! Iv had cinnamon sugar ones before to. Add a speck of nutmeg, good little snack for breakfast, or even as a topping for breakfast foods.

    My grandma died before she could teach me to cook so it's nice to find your video of real southern cooking! Every other fried squash video I found used fancy junk like bread crumbs and I knew that wasn't right 😆

      If you don’t mind my response to your question, I can tell you what the difference is. She is more than likely referring to such products as Jiffy mix, which is premixed with other ingredients including baking powder, therefore making it unsuitable for breading.

      Hello, I apologize for the late response. I have been ill for several months. Indeed Davida was right, there is a difference. I use plain yellow cornmeal. I always prefer to add into a recipe what is actually needed. Cornmeal MIX has several of the following: baking powder, baking soda, flour and other additives. Perhaps OK for certain recipes, but in my opinion not this one for sure. I prefer regular cornmeal. Great comment, thank you for asking.

    Thanks for the video, and the note about Zucchini and Eggplant. I love Okra and never knew what to do with an eggplant. Gonna try it with the eggplant. Right now gonna fry up some yellow squash and fried chicken liver.

    My question is my first batch or two is fine but when I get done with a few batches, it’s like the flour collects on the bottom of the pan and they come out do dark. What can I do to stop that? I’ve tried less flour but then it’s almost like they have none.

      Hey Wendy (that was my sister's name), Yes honey, that just happens, no way to completely stop that sediment that settles down in the pan. I have two choices for you, the first thing that can help is using something like a dutch oven along with a mesh colander, and when it builds up in between batches you can carefully remove the colander and dump out most of the sediment and replace to the dutch oven before frying your next batch. I will try to remember to demonstrate it the next time I fry something similar to this squash. I will be filming a fried okra video very soon, in fact I will try to move it up so I can show you. Now having said that, the next thing which in all honesty the easiest, I just use a deep skillet and by adding a little extra oil to the pan, it helps to alleviate the problem. You can also have a fine mesh strainer and just skim the sediment out of the bottom between each batch, again an easy solution. I will show you when I make the fried okra video. I hope that helped honey and I am behind on comments, so I apologize for just now answering you. :D

    Why cut the squash in disk shape. Why not cut lengthwise or even diagonal. It would make bigger pieces ...but keep them still thin sliced so it will be crispy. Thus they would fit better on sandwiches and easier to fry.

    I make mine using half bacon fat and vegetable oil, flour cornmeal mix the same and use the egg and buttermilk mix. The bacon fat gives them a great taste. I use this mix for fried green tomatoes as well. Yum Yum!

    I wondered why you don’t like to use cornbread mix. I’ve been using jiffy box mixed with flour equal parts pepper in the batter and salted on the plate. It’s pretty yummy

      It must just be what we are used too using. My Mama and Grandmother used cornmeal and I do as well. I tried Jiffy years ago when I was first married, the flavor just isn't the same at all. Not to mention all of the chemicals in Jiffy. But it really just boils down to is what one likes and what works that is important. To me it is more than easy to mix up recipes using actual cornmeal. :D

    Hello, Why not cook them with the lid on? I would think it would cook faster and save time and heat. What would be the problem with doing that if any?

      I think when you put the lid on it causes your fried foods to not be crispy. You're keeping the steam inside.

      Hello Melinda, no you are no blind! LOL I am glad I was online working on my channel so I could reply quickly. My mistake! I did indeed forget to put it in the description. It was one cup of buttermilk, but as it was just a wash it needn't be exact. Thank you for catching that! I will correct it right now! ;D

    How many inches of oil do you think you use? Also do you just put the stove on medium heat? Should I use a thermometer to check the temp of the oil?

      Hey there Katie honey, just approximately 1-1 1/2 inches or so of oil. You don't need to be exact. About what you would use to make french fries, Temp wise I believe I was around 375, basically a medium high temp. Just throw in a test piece, if it cooks too fast and way too browned then lower your heat. Always do a test piece or two, then when it is to your liking, stay at that temp, remember when you first add in whatever that you are frying, squash, fries, okra, etc., The oil temp will temporarily drop, give it a chance to adjust before you start messing with your temp.       Hey there Chad, I just used regular cooking oil, most likely either Canola or Sunflower. Just don't use olive oil for recipes such as this. :D

    Hello Hedy, I am new to your site. I can appreciate the fact that you don’t peel your squash. All of the nutritional elements are in the skin and that is the only reason why I would consume any vegetables. I must also say, that even though you do ( ramble), your ( ramblings ) are chalked full of ( pertinent ) information, not like a few others that were rambling just to fill in the required time. Also I must say, that I too season my meats/veggies before I dip them, however, I use ( less ) seasoning in the dry ingredients to even out the flavor. Also another reason why I do it that way, is simply because sometimes the breading has a tendency to not adhere to the food in question sometimes thus leaving you with food that is ( bland ) in flavor. I will view ( more ) of your videos before I make a decision as to whether to subscribe or not. I must say, that I really did enjoy ( this ) video indeed.
