Hi, Nikki - long-time watcher, first time commenting. I just wanted you to know what your videos have meant to me. I’m a Southern California native, 58 years old and have been an ethical vegan for 17 years. Every Sunday for years my husband and I would eat our Sunday morning breakfast while watching your latest videos - as well as Malin’s from Good Eatings. I sure hope Malin is well - she’s so missed, as are you now. I just wanted to reach out and say I hope all is well, and we hope you haven’t said goodbye to TH-cam. I don’t have Facebook or IG. With the loss of our daughter three years ago (sadly she took her life during the Pandemic at age 34), getting off social media was one of the mindful ways I began to live my daily life with purpose and intention. TH-cam has provided me with not only entertainment, but more importantly good meals and valuable information and content thanks to videos such as yours, Malin’s, Julia Ayers, Amanda Ducks, Emme @Sustainably Vegan and Derek Sarno. I’m so sorry for the loss of your sister (my son shares your pain - he’s the one that got the call…) - I hope you and your family are doing as well as you can be. Like you said, it comes in pieces. The healing will never be complete, but we can just strive to be better today than we were yesterday, not only to make our loved ones who have passed on proud, but also to be the best we can be for those who are still with us every single day. Hey Nikki, definitely meal prepping your chickpea tuna this week. I couldn’t agree more on the chopper, it makes cooking more enjoyable for me! I love that fabric shaver, it’s made a lot of my older clothes look brand new 😊
One of my favourite things lately is to make my own chickpeas - soaking for eight hours and then a 30 minute boil. Not as big this time, but I think I’m going to soak eight hours soak in the fridge for another two hours and then boil for 45 minutes and see how that works !

Love the mini meat loaf idea, I will be making, Its difficult to convenience especially in the whole food plnat based diet life, the sweater gadget on the couch was a good idea too!
I'm so glad you like it! I truly love this recipe and make it all the time. So great with mashed potatoes or to make into sandwiches. Sometimes I serve it with ketchup on the side (usually in the summer) and sometimes I serve it with gravy (usually in the fall and winter) Both ways are good! Hope you enjoy!
The Siggi’s yogurt she has to right at beginning is DELICIOUS!! I get the coconut with cinnamon. YUM. It has less of that bitter zing regular yogurt has.
I agree! I didn't love some of the flavors at first but now I love all of them. I agree that the cinnamon one is the best though. Such a nice texture 😊

Hope you have a lovely time with your in-laws! A slightly contentious question but now you're engaged, have family members asked you and your fiancé about how you will raise your children, especially if he is not vegan as well? I have found I get quite defensive when people worry our future children will be malnourished, restricted and eventually start resenting me if I chose to raise them plant-based, especially if they see the other parent eat "x,y,z" in the home! I know the questions are coming from a place of love but I was wondering if you had any experience on how to reassure close loved ones
I hear you! It can be hard because you're right, it comes from concern. I honestly don't have a ton of advice on this topic but I would love to hear some if you pick up some good tips 😊❤️
Good question! I’ve actually tried it with other flours and it doesn’t turn out as well. I have no idea why but chickpea works best. If not, breadcrumbs are good. Just alter the amount if needed. Maybe a little bit more ❤️❤️

Ooo let me know how it goes! Freshly make chickpeas are so tasty and have a great texture. Do you ever add anything to the water before boiling?
