Not all Thai language instructors can deconstruct the language into basic terminology that is readily understandable by a beginning student. But, kru Noon you really possess these skills. Your phonetic transliteration of the Thai language into English is one of the best I’ve ever seen in all my years of studying the Thai language. I’m so happy that you use the Thai alphabet in all of your examples. I’m still working on this. It’s so important to learn this to fully grasp the pronunciation of the Thai language. คิดว่ายังไง =use in general to ask what do you think? Ask about opinion คิดว่าอะไร =you ask when you see something but you cannot figure or you dont know it.

I am vegan, which means that I don't want to contribute to animal abuse in any way. I don't eat: meat, fish, eggs, milk, honey. I guess it's a similar to เจ. What would be the best phrase to say to a Thai person to make sure that he/she perfectly understand this concept?
It is a bit rude "à rai wá อะไรวะ" it is like what the hell!! When you express your feeling abit of upset or get angry. It is not same with wâa ว่า There are different word.
wish kru could do more lesson on board, when you're on public, I can feel shy on your face, so the quality of the lesson is not good on public. anyway your course still be good, wish best for you.

Je เจ is the right word. But we have "mang sa wi rad" มังสวิรัต =vegetarian can eat milk and egg.
If I am talking with someone and I know their brother, how do I say "Please tell your brother I said hello!".

Try to remember what I prepare for the lesson with the word "wâa" so it might look shy but actually I was focus on the sentence.
