In Hawaii we dig a pit, and bury the pig, we use pineapple juice, soy sauce and sugar on the meat. You cover it with banana leaves and then hot stones. Maybe next time dig a pit, and line it with stones. Also put the stones on the inside of the pig. The skin comes out crispy. Pig candy. Great video. 👍😋👍

I remember coming to Mongolia from China in 2004 and ordering what I thought were dumplings. The waitress asked me, ’how many?’ And I thought wow that’s a strange question so I said 8. She shook her head and was like, 1. I ran with it, kind of amused and when she btought that single dumpling to the table I finally got it. Buuz is no small man’s dumpling.

Really nice video, a whole pig roasted is really tasty, especially the skin, Nargie said pig meat is rare in Mongolia, why ? is the taste or ? Also I am not sure about sheep or goat, but pork really needs to be well cooked due to a lot of bacteria that it carries, around 145-160 Fahrenheit internally or 60-70 Celsius to be safe.
I’m South African but I think pigs are not well suited for nomadic cultures since they’re not really herd animals unlike ungulates that could withstand long harsh winter without constant source of water. I also speculate that since most of Mongolia has just became urbanised after the 20th century I think it hasn’t been that long enough to popularise them aside from Chinese/Russian inspired dishes.
Trichinosis can be avoided if the meat/fat is cooked to 145F. As Americans we grew up with the feared rare pork notion but health standards have improved across the board, even in the horrible mass ag farms. This helps a great deal. White pork fat is not something you see in our houses being served up, if it's not transparent fat, it's like rolling the die. I'm mostly bummed about how the skin isn't crispy, it's one of the best parts of a hog!
@@shotgunbettygaming Looks crispy though, as a dude terribly scared of bacteria from meat though 80% of my meals consist of only meat, I was used to cook everything well done, even beef or wild game so now its hard for me to enjoy anything medium or rare, with pork doesn't matter the breed or origin as long as you go 145-150 internally any bacteria is long gone though the temps have to be even on all surfaces of the meat.
I love chicharrones! One of my favorite Mexican foods are chicharrones or carnitas. And I am not big on eating pork because it sits on your belly like a lead shot. Feel like going to a 3 mile run and a swim after eating pork. ☺☺

Not typical in a sense that we don’t eat it as a main course, but we do eat plenty of pork sausages, ham and pork belly cooked in Korean bbq style. However most of the pork consumption is in the cities.

I won't speak negative about your method. It's good. Around here, burn the hair with torches, darken the skin, clean the skin with water. Before you cut it open. Either way, looks very delicious, and you have done a good job.

I think the dish comes from a time before metal cookware was common place. Considering the nomadic practices of the people carrying around metal cookware would just be extra weight. Stones are everywhere and readily available so I think that’s why they used them

I think the dish comes from a time before metal cookware was common place. Considering the nomadic practices of the people carrying around metal cookware would just be extra weight. Stones are everywhere and readily available so I think that’s why they used them

They use Russian gas and it has no taste or smell but definitely adds some poisons to the skin.
